Agreed, side mount has little precision unless you're flying an airbus. I hard clamp my Moza AB9 to my SRC sim rig mounting plate and lower the plate so its at a low angle and then I pull my seat into and under the stick so like you say the pivot point is correct, effectively between your legs and with the stick being easy to reach. If I race I unclamp the base and bolt the FANATEC base on and adjust the angle accordingly.

Looking sweet there my man. Are you adding anything the cover the floor area? Thinking being blinded in VR and a foot slip might be nasty but even just being able to move and rest the feet to avoid cramping up would be something to consider.

Centre mount joystick? Screams in Airbus….. 🤯 On a serious note, the F-16/22/35 sidesticks are mounted on a Load Cell (or similar) and have a very small range of motion so they are more precise than the usual home sim solution with a large range of motion (compared to the real deal)

oh yes that is a fair point Airbus GA uses a side stick configuration I forgot about that, maybe need to scrub the Boeing stick off the front if you can arrange sponsorship 🤣
