I agree, the real challenge is doing this in a stiff on-shore breeze with a single screw outdrive and no thrusters. (Let go the bow line and push it physically off the dock . Then let go the stern line - and hop smartly aboard before the bow blows back!) With a twin engined shaft drive boat however it's perfectly possible to make the boat move sideways without thrusters. Let's say you're moored port-side-to on the dock and the wind is blowing the boat onto the dock. The technique is to put the helm hard over to port and the port engine ahead whilst at the same time putting the starboard engine into astern. The prop thrust from the port engine is deflected by the rudder and pushes the stern away from the dock. Meanwhile the starboard engine is pulling the boat astern and levering the bow off the dock to starboard. The skill is using just the right amount of throttle on each engine.

Planning to leave the dock with a thruster is always a mistake. The plan should always be without a thruster. The thruster should only be considered a bonus. Why don’t you show the proper use of spring lines to create the proper departure angle.

These videos are quite informative however it would make a lot more sense to me to do the manoeuvres in a single engine, no thrusters vessel and a stronger breeze, that way we would get a better appreciation of the skills required and used.
