BERRY CONFIT
Ingridients:
350g berries
10g gelatin
60g water
100g sugar
12g cornstarch
Put the cake in the freezer overnight.
BISCUIT RED VELVET
Ingridients:
165g flour
150g sugar
135ml kefir
75ml veg oil
75g plums. oils
1 tsp food coloring
0,5 tsp bak. powder
vanilla, 2 eggs, 0,5 tsp soda, 1 tbsp cocoa, a pinch of salt
Bake 30-40 minutes at 180 degrees.
CREAM CHEESE
Ingredients:
10g gelatin
60g water
100g sugar
25g cream cheese
300g cream (33%)
vanilla
MIRROR GLAZE
Ingredients:
12g galatin
70g water
150g sugar
75g water
food coloring
150g glucose syrop
150g white chocolate
100g condensed milk
Boil syrup to 105 degrees.
Cover the glaze with cling film and refrigerate overnight.
Heat the glaze in the microwave to 31 degrees, punch with a blender and pass through a sieve.
