Mouth watering homemade chats
(Masala Poori, Bhel Puri & Pani Puri)
Ingredients -
Soak the dried green peas 🫛 overnight before use
Take 10 - 15 Red chillies, cinnamon,
4-5 cloves, 1 star anaze, black stone flower, hand full of fried gram, coriander leaves, mint leaves, 1 chopped tomato, 1 onion, ginger🫚 & garlic. Then, grind it into a fine paste.
Masala puri paste is ready to use
Take 7-9 green chillies, half a bunch of coriander leaves & mint leaves, a tablespoon of cumin seeds, a spoon of black salt, then grind it into a fine paste.
Pani puri spicy chutney is ready to use
For sweet chutney, soak tamarind with water, then add some jaggery, cumin powder, and kashmiri red chilli powder into tamarind extract and give it a nice mix.

Boil the soaked green peas with water in a cooker, add in 2 potatoes for boiling as well
add in a spoon of salt, close the lid & let it cook.
In a pan, pour oil. After it heats a bit, put kasuri methi, then add in grinded masala puri paste & saute well, let it simmer, add in water or peas stalk, stir in between.
Meanwhile, take only 1 ladle of boiled and grind into fine paste & ke the p rest of the peas aside.
Boiled peas and potatoes are ready to use.
Then, goes in green peas paste & 1 mashed potato into the pan, give it a mix, then add in salt as per your taste , let it boil for a while, stir in between. Finally goes in remaining boiled green peas, let it come to a nice boil.
Masala Puri gravy is ready to use
After that, Chop a cucumber 🥒, 2 onions 2 carrots🥕 & 3 tomatoes 🍅

finely chopped coriander leaves, grated carrots,finely chopped onions & green chillies
Cut the remaining 1 boiled potatoe into small cubes and keep the small fried poori's ready
In a plate crush, some 5- 6 poori's , pour masala puri gravy along with peas, add some chopped onions over it, add in chopped tomatoes 🍅, add grated carrots 🥕,
then goes in coriander leaves, add potato cubes, add some sev mixture & add kara bondi , add some more coriander leaves, then, add in some more masala puri gravy all over it, add in a pinch of kashmiri chilli & salt,
Final, y squeeze in a drop of lemon 🍋.

For Bhel Puri, take a bowl and add in some chopped onions,
For Bhel Puri, Take a bowl and add in some chopped onions, add in chopped cucumber, grated carrots 🥕, tomatoes, potatoes , then goes in coriander leaves, add in a teaspoon of green chutney paste, salt as per your taste, add in a pinch of kashmiri chilli, then add in sweet chutney, masala puri gravy along with peas, mix well. Final, y add in some puffed rice, some sev mixture, kara bon, i and give it a nice mix. Dish out on a plate & garnish with masala puri gravy on top.
Yummy Bhel Puri is ready to serve
For Pani Puritakeke water in a vessel, add in a spoon of green chutney paste, sweet chutney paste, salt to taste , a pinch of chat powder if required and mix well. Pani is ready to use for Pani Puri
Take 6 small poori's, make a hole in the centre, place it around in the plate, stuff it with potato, goes in chopped onions, carrots, tomatoes, stuff it with some coriander leaves, goes some sev mixture.
Pour masala puri gravy along with peas
at this time. If you wish to, then pour in pani into the stuffed poori's one after one & serve it immediately.
