This is absolutely wrong way of making Ikokore. You don't cook the yam first and pouring fresh palmoil like that is wrong. The stew is supposed to be cooked first with palmoil and ingredients. Take ingredients out then add lumps of Ikokore. That's the way my late Grand mother and late Mom all from Ijebu-Ode taught us.

I suppose there are different ways of cooking it. I was taught to cook it like she's doing. That is, adding the grated water yam in boiling water already seasoned with fish, salt, etc. We add the ground stuff and oil after. The salt in the grated yam is new to me, but it probably works well.

Crayfish is never part of the traditional ikorere recipe.

@olufemi oke This is the way we cook ours, I am from Ago iwoye and my mum from ijebu Igbo. Variety they say is the spice of life, try this method before knocking it off. Just like yam porridge some make a stew base before yam, I don’t like that method and I do not use it. Please be informed that there is no one way of making Ikokore nor other food. Thanks 🙏
