For me, there are no substitutions going on here. It is the same harmony but with a specific selection of chord voicings of the original chords. This allows the same way of thinking when you're improvising or playing over it. It makes life simpler and easier.

I love your channel, but this lesson, I understand the substitutions but it just sounds like block chords. I don't really feel that it ties in to the song. Probably in the next lesson, you're going to have melodic movement in each chord.
