Ingredients:
1. 31/2 cups of shredded mexican squash or shredded zucchini (here we are using leftover squash)
2. 1/2 flour
3. 1/2 finely chopped parsley (1/2 bunch)
4. 4 green onions finely diced (1/2 cup)
5. 2 garlic cloves minced
6. 3 large eggs
7. 1 tsp. salt
8. 1/2 tsp. middle eastern seven spice
9. 1/2 tsp. numeric
10. 1/2 tsp. cumin
11. 1/2 jalapeño seeded and diced (optional)
12. cooking spray
Directions:
1. Shred or finely dice the squash or zucchini and place in large mixing bowl.
2. Whisk the eggs separately and add to squash bowl.
3. Add in minced garlic, diced jalapeño, chopped parsley, onion, flour, salt and seasoning.
4. Mix well until all ingredients are well incorporated and all the flour has been moistened.
5. Heat a griddle to 350 degrees F or heat a pan over medium heat.
6. Spray griddle or pan with baking spray.
7. Using a large spoon scoop batter onto griddle or pan and flatten out in a patty shape.
8. Cook for 3-4 minutes on each side or until golden brown.
9. Remove from heat and garnish with sumac and a squeeze of lemon juice.
