Chicken Changezi is a delightful Mughlai-style chicken curry that’s rich, creamy, and bursting with flavor. Legend has it that this dish originated during the rule of the 13th-century warrior Genghis Khan (Chengiz Khan), who preferred mild and non-spicy food. Here’s how you can make it:
Mughlai Chicken Changezi Recipe
Ingredients:
750 grams bone-in chicken (thighs or drumsticks work well)
2 tablespoons yogurt (curd)
6 tablespoons oil (or a mix of oil and ghee)
1 teaspoon ginger-garlic paste
Salt to taste
1 ½ teaspoons Kashmiri red chili powder
½ teaspoon turmeric powder
1 cup homemade tomato puree
2 onions (chopped, roasted till soft, and ground to paste)
Fresh cream (as desired)
Instructions:
Marinate the chicken in yogurt, salt, red chili powder, and turmeric powder for about 30 minutes.
Heat oil in a wok or pan. Add whole garam masala (cloves, cinnamon, cardamom).
Sauté ginger-garlic paste until the raw smell disappears.
Add the marinated chicken and roast until the color changes.
Stir in the tomato puree and onion paste. Cook for a few minutes.
Add salt, Kashmiri red chili powder, and a splash of water. Simmer until the chicken is tender.
Finish with fresh cream and serve hot with naan or rice.
