Can anyone PLEASE explain to me why it is that almost ALL the cars that fall onto the highway explode? Because WHENEVER I do this, almost all the cars DON'T explode (even when they land on their bumper/roof. Why is this? I really don't understand ... Please someone answer this.

If you're trying this in online with the bus method, there are far fewer locations on the vehicles that can cause it to explode. It's better to do it in single player, for some reason Rockstar made it easier for vehicles to explode on impact in single player
