Quick question let's say I am doing this only for a handful of blogs or information pages so would it only be those pages that would get translated or by default all the internally linked pages i.e. header nav pages etc also get automatically translated & published? can I opt those out?

You can try staging domain for demo purposes, but for production sites, you'll need to purchase a plan.
