Mumbai's Cheapest Pizza Made in Desi Oven | Indian Street Food

Here's the Mumbai street style version of pizza made in desi oven on the tava. They use the ready to use base which is topped with green spicy chutney and red garlic chutney. Simple tomato onion as topping with lots of cheese and cooked over tava which melts the cheese. Taste is very desi and spicy with crunchy base. #mumbaifood #streetfood #indianstreetfood

I know this doesn't really apply here, but many restaurants that are visited quite often and are popular don't always use gloves. Especially during plating a dish, bare hands are used but cleaned of course. With this guy we don't know if he just cleaned his hands or not. That said, whatever germs he might have on his fingertips are likely eliminated anyways by the steam. That steam gets really, really hot, basically just the same as an oven. That'd eliminate any germs and bacteria he put on the pizza. Lots of pizza cooks actually wear no gloves when putting no toppings on. It's only imperative to use gloves when dealing with raw meat. Otherwise as long as you routinely wash your hands every so often, it's not that big a deal. In fact, a cook washing their hands every 15 minutes is likely to have less germs on it than when you eat something with your own bare hands if you don't wash first.
