You are supposed to remove the "beard" of the mussels before cooking them. The hairy looking part they use to attach to the rock. It isn't harmful, but that's meant to be removed as part of the cleaning/prep process.

a few suggestions, 1 call the shellfish hotline to make sure it is safe to harvest . 2a prime tool is a set of groove joint pliers so you can chose all the same size. 3 try not to take too many from the same spot as it breaks down the defensive "mat" of the mussel bed. 4 wash them alot, I normally rinse them 4 or 5 times in no sand seawater before leaving the coast and bring them home in seawater to cover them, it will help with any sand they have. 5, plan on the meat to be about 1/3 of the volume or less of the inshell mussels. 6, while picking them remove any small mussels from the ones you want to take, the limit on mussels is 72 I think and if the game wardens get picky,, you could pay 272 $ per over the limit, . 7 cleaning the mussels at home using the groove joint piers works good for the barnicles. after cooking ( steaming) any mussels that do not open should be discarded as they may have been dead when you picked them. I have kept mussels in sea water for 36 hrs before with no problems
