Are your mornings hectic and not enough time to have breakfast? Well I have a solution for you! I love to prep a few different breakfast options each week that we can easily enjoy to start our day!
On the breakfast menu -
Carrot Cake Overnight Oats - These are so good alone or enjoy with a dollop of yogurt. The best part is you can make them the night before and grab to take while heading to work or school!
Gluten-Free Blueberry Muffins - Even if you aren't gluten-free (we aren't) we still LOVE these muffins! I love the flavor of them plus they are so easy to make too! I love to make them ahead and pop in the freezer then let them thaw on the counter. They are great for the kids lunches too!
Homemade Freezer Waffles - I have been making these for a long time and they are a family favorite! Simply prep ahead, cool then pop in freezer bags. When ready to eat, just pop in the toaster for a few minutes to crisp and warm up! Enjoy with syrup or to make waffle toast topped with jam or peanut butter and sliced bananas!

Freezer Breakfast Sandwiches - Another family favorite! I love prepping these ahead to have in the freezer. Simply grab as many out as you need, wrap in a paper towel and heat for a minute-ish per side in the microwave. In just a few minutes you have an easy and delicious breakfast sandwich to enjoy on the go. It's quicker (and better!) than the drive through!

Hard Boiled Eggs - in the air fryer! So easy and great to have for busy mornings!
I also like to cut up some fresh fruit like cantaloupe to enjoy with our breakfast too!
And if you love granola wait until you see the yummy granola I have! Another great option for busy mornings! Just add a scoop of yogurt in a to-go container, top with some granola and some berries for a quick, easy and yummy breakfast to start your morning!

Helpful hint : freeze your waffles on the baking sheet, the. Place in your freezer bags. They don’t stick together that way! ❤. Ditto for pancakes!

Take a waffle, put vanilla ice cream on top, add strawberries that have been cut up with sugar added to make a syrup, then put whipped cream on top! Yumm! It is sort of a strawberry shortcake, but with a waffle and ice cream.

Hi Jenn, breakfast goodies looked delicious. My favorite was the overnight carrot cake oats, sounds delicious. Egg sandwiches were another favorite. Love the prep and make and put in freezer, makes things so easy especially on rushed mornings. Pre making the waffles would be great for an ice cream sandwich treat. Great ideas. I have made the egg sandwiches using the mason jar rings but didn’t turn out as good as the way you did it with the rectangle baking pan and biscuit cutter. I will definitely try it your way. Ok, i know this may be a silly question, but, whats the difference in coconut oil, does it taste like coconut? Is it only meant for like say, sweeter dishes? Ive never heard of it, i have heard of coconut milk but not the oil

Hi! Not a silly question at all. It's a nice alternative than using vegetable oil. It does add a subtle coconut flavor, not in the spray though. I love to use it in baking. For sautéing I usually use olive or avocado oil. :)
