Hi, if you don't have a bird's beak knife / carving knife as shown in carving techniques lesson one. You can use any sharp kitchen knife with a small blade without a serrated edge. Please let me know how you are going. Thank you very much for subscribing and all the best :)

the knife I am using on this video - I bought it from the knife shop - they call "paring knife" - but I call a carving knife - please check with your local knife shop. they come with red or black or white plastic handles. all the best :)
