Here's a detailed recipe for homemade Mutton Karahi:
Mutton Karahi
#### Ingredients:
- 500 grams mutton, cut into medium-sized pieces
- 2 large tomatoes, finely chopped
- 2 medium onions, finely chopped
- 3-4 green chilies, chopped
- 1 tablespoon ginger-garlic paste
- 1 teaspoon red chili powder
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon turmeric powder
- 1 teaspoon garam masala
- 1 teaspoon black pepper
- Salt to taste
- 1/2 cup yogurt, whisked
- 1/4 cup oil or ghee
- Fresh coriander leaves, chopped (for garnish)
- Ginger, julienned (for garnish)
- Lemon wedges (for serving)
#### Instructions:
1. *Prepare the Mutton:*
- Rinse the mutton pieces thoroughly under cold water and pat them dry with a paper towel.
2. *Cook the Mutton:*
- In a large karahi (wok) or heavy-bottomed pot, heat the oil or ghee over medium heat.
- Add the chopped onions and sauté until golden brown.
- Add the ginger-garlic paste and sauté for another 2 minutes until fragrant.
- Add the mutton pieces and cook until they are browned on all sides.
3. *Add the Spices:*
- Add the chopped tomatoes, red chili powder, ground cumin, ground coriander, turmeric powder, black pepper, and salt. Cook until the tomatoes are soft and the oil starts to separate from the masala.
- Add the whisked yogurt and mix well. Cook for another 10-15 minutes, stirring occasionally, until the mutton is well-coated with the spices and yogurt.
4. *Simmer the Mutton:*
- Add enough water to cover the mutton pieces. Bring to a boil, then reduce the heat to low and cover the pot. Let it simmer for about 1-1.5 hours, or until the mutton is tender and the sauce has thickened. Stir occasionally and add more water if needed.
5. *Finish the Dish:*
- Once the mutton is tender and the oil starts to separate again, increase the heat to medium-high and cook for another 5-10 minutes to reduce the sauce and enhance the flavor.
- Stir in the garam masala and chopped green chilies. Cook for an additional 2-3 minutes.
6. *Garnish and Serve:*
- Garnish with chopped fresh coriander leaves and julienned ginger.
- Serve hot with naan, roti, or steamed rice, and lemon wedges on the side.
