Ingredients
1) Fresh goat liver - 400 grams
2) Medium sized onions , sliced - 2
3) Crushed or minced garlic - 1. 5 tbsp
4) Ginger paste - 1 tbsp
5) Turmeric - 1 tsp
6) Salt - 1 tbsp
7) Freshly crushed black pepper -2 tbsp
8) Mustard oil - 1/4 cup
9) Ghee - 1 tbsp
10) Green Chillies - 4-5
11) Coriander for garnishing (optional)
Method
In a pan heat the mustard oil. Fry off the sliced onions till they turn light brown.
Add goat liver and fry with the onions.
Add ginger-garlic and slit green chillies and continue frying.
Add turmeric and mix well.
Add 1/4 cup water and cover and cook for 5 minutes.
Remove lid and add the crushed black pepper, and 1/4 cup water, and keep cooking on low-medium heat till water evaporates and oil separates.
Add a couple of green chillies whole. This will enhance the flavour.
Add salt at this stage. DO NOT add salt before this stage, as that will lead to rubbery and hard liver.
Mix well, garnish with coriander.
Cover for 5 minutes before serving.
