Written Recipe for Mutton Masala Chop
For Cooked Chops
Ingredients:
•Mutton Chops 17 Pieces
•Chopped Onion (Chopped Piyaz) 1 Small
•Chopped Ginger & Garlic (Chopped Adrak & Lehsan) 2 tbsp
•Salt (Namak) 1 tbsp
•Oil 4 tbsp
Direction:
•In a Pressure Cooker, Add Mutton Chops, Chopped Onion, Chopped Ginger & Garlic, Salt, and Oil, and Mix Well.
•Cover & Cook on medium flame for 2 whistles until tender (Approx 15-20 mints).
•Take out all the Chops and Boil the remaining stock for 5 mints until thicken and reserve for later use.
For Grind Paste
Ingredients:
•Peanuts (Mong Phali) 4 tbsp
•Coconut (Khopra) 4 tbsp
•Sesame Seeds (Safed Til) 3 tbsp
•Green Chillies (Hari Mirch) 8
•Soaked Kashmiri Mirch 4
•Cashew Nuts (Kaju) 2 tbsp
•Onion (Piyaz) 4 Large
•Water 2 tbsp
•Ginger (Adrak) 2 Inc
•Garlic (Lehsan) 35
•Water 1/2 Cup or as required
Directions:
•Heat griddle, add Peanuts, dry roast it on medium flame. Remove the roasted Peanuts and set aside.
•Heat griddle, add Coconut, dry roast it on medium flame. and remove the roasted coconut and set aside.
•Heat griddle, add Sesame Seed, dry roast it on medium flame. Remove the Roasted sesame Seeds and set aside.
•In the grinder, add Roasted Peanuts, Roasted Sesame Seeds, Roasted Coconut, Green Chillies, Soaked Kashmiri Mirch, Cashew Nuts, Onion and Water and grind into a Paste.
•Add Ginger, Garlic and Water and grind into a fine paste.
For Marinate & Fry
Ingredients:
•Grind Paste
•Water 1/2 Cup
•Curd (Dahi) 1-1/2 Cup
•Coriander Powder (Dhanya Powder) 1-1/2 tbsp
•Red Chilli Powder (Lal Mirch Powder) 1 tbsp •Garam Masala Powder 1 tsp
•Turmeric Powder (Haldi Powder) 1/2 tbsp
•Salt (Namak) 1 tbsp
•Oil 1/2 Cup
•Cooked Chops
Directions:
•In a wok, add Grind Paste, Water, Curd, Coriander Powder, Red Chilli Powder, Garam Masala Powder, Turmeric Powder, Salt, Oil, Mix well.
•Add Cooked Chops, combine well and cover and marinate for 2-3 hours.
•In a Frying pan, add cooking oil and fry marinated Chops pieces on medium flame from all sides until golden brown & set aside.
•Reserve remaining marinated for later use.
For Masala Chops
Ingredients:
•Oil 1 Cup
•Bay Leaf (Tez Patta) 2
•Black Cardamom (Badi Elaichi) 1
•Green Cardamom (Hari Elaichi) 1
•Cinnamon Stick (Dar Chini) 1
•Star Anise (Badiyan) 2
•Reserved marinated Gravy
•Reserved Stock
•Fried Chops
•Warm Water 1 Cup
•Chopped Coriander Leaves
•Charcoal
Direction:
•In a wok, add Oil, Bay Leaf, Black Cardamom,
Green Cardamom, Cinnamon Stick, Star Anise
And Reserved Marinated Gravy, Mix well and Bring it to boil and cover & cook for 15 mints on medium flame until oil separates (Stirring it Occasionally).
•Add Reserved Stock and Fried Chops and mix well.
•Add Water and mix it well.
•Add Chopped Coriander Leaves and give Charcoal smoke for 3-4 mints.
•Mutton Masala Chops is ready to hot serve.
•Garnish it with Some Chopped Coriander Leaves .
•Serve it with parathas.
