Yakhni Pulao | Mutton Pulao in Pressure Cooker | Simple Mutton Pulao | Yakhni Mutton Pulao | Mutton Pulao Recipe | How to Make Yakhni Pulao
Ingredients for Yakni Mutton Pulao:
For making the stock (Yakhni) -
- Mutton, medium pieces with bones- 500 gms
- Salt- 1 tsp
- Shahjeera (Caraway seeds)- 1 tsp
- Black cardamom- 2
- Cinnamon- 2
- Cloves- 4
- Bay leaf- 1
- Coriander seeds- 1/2 tsp
- Black Peppercorns- 12-15
- Javitri (Mace)- 1 flower
- Jaiphal (Nutmeg), grated- 1/2 tsp
- Garlic cloves with skin, crushed- 8 cloves
- Ginger juliennes or thick slices- 1 inch piece
- Ghee (clarified butter)- 2 tbsp
- Water- 3 cups
For the Pulao -
- Basmati Rice- 2 cup measure
- Onions, sliced- 2 medium
- Garam Masala powder - 1 tsp (Link to our Garam Masala Recipe: • GARAM MASALA RECIPE | ... )
- Curd/ Yogurt- 4 tbsp
- Green Chillies, slit- 3
- Mint leaves- 1/2 cup leaves
- Saffron (soaked in warm milk)- few strands
- Salt - 1 tsp
- Refined oil or ghee- 2 tbsp
Preparation:
- To boil the mutton & prepare the stock (Yakhni), heat 2 tbsp ghee in a pressure cooker.
- Add all the whole spices and give a stir. Now add the mutton pieces, salt, crushed garlic and ginger slices.
- Mix and fry on medium heat for 2 mins till the mutton changes colour.
- Add 3 cups of water, give a mix and close pressure cooker. Pressure cook till 3 whistles (on high heat till 1st whistle, then lower heat and continue for 2 more whistles)
- Allow the cooker to release pressure on its own.
- Once pressure is released, strain the Yakhni/ mutton stock and remove the mutton pieces.
- (Make sure the Yakhni is 600 ml (about 3 cups), if not add water to make it 3 cups. The rice will be cooked in this Yakhni or mutton stock)
- Fry the onions till golden, remove and set aside.
- Take out the mint leaves & slit the green chillies.
- Whisk the curd/ yogurt and set aside.
- Soak the rice for 30 mins and drain the water just before making the Pulao.
Process:
- Heat refined oil or ghee in a pressure cooker.
- Add the bay leaves, slit green chillies and mint leaves. Give a stir and then add the boiled mutton pieces and most of the fried onions (birista). Mix and fry on medium heat for a minute.
- Lower heat and then add the whisked curd/ yogurt and the garam masala powder. Mix and fry on low heat for 3-4 mins till the curd is cooked and oil separates.
- Now add the drained rice, give a mix and fry for a minute.
- Add the saffron infused milk, mix and fry for a minute.
- Add the yakhni (measure & make sure it’s 3 cups (600 ml), if not, add water to make it 3 cups).
- Add 1 tsp salt and give a mix.
- Close the pressure cooker and pressure cook on high heat for 2 whistles.
- Allow it to release pressure.
- Garnish with the balance fried onions.

I have an electric pressure cooker that doesn’t whistle.How long is timing for whistles?

The mutton needs to be cooked twice..once for the Yakhni/stock and later with the rice. So the mutton needn't be fully tender first time. So was cooked for 3 whistles which is around 12 mins in my cooker - on high heat for 6 mins till 1st whistle and 6 more mins on low heat for 2 more. Hope this helps 😊

While making the yakhni, crushed cloves of garlic and ginger juliennes have been added. Since it's pressure cooked, the flavour of ginger and garlic will come into the mutton and if you want while straining the mutton you can press and strain the ginger and garlic too ( only for the juice) 😊👍

Never saw pulao being made in a pressure cooker esp the rice part... never saw saffron milk being added before stock... do not understand why use nutmeg powder instead of whole nutmeg.... do not know why you did not use a cheesecloth for the khada masala esp when you use pressure cooker... did not understand why you chose to tell the number of whistles instead of time under pressure which is more reliable unit...

Made this recipe 3 times now , twice with chicken and once with mutton. Amazing taste all time, wife was impressed 👌 modified the recipe a bit to add a bit more spice and flavor by adding kasturi methi, red chilli powder, pinch of pepper powder when adding the garam masala. Yes, both are correct. 1 US cup measure holds around 175 gms of Basmati Rice. So 2 US cup measures of Basmati Rice weighs 350 gms 😊

i love all the recipes here. Howeever, pressure cooking using the whistle method drives me nuts. I have the European style pressure cooker with spring valve, like the Kuhn Rikon. Can anyone point me to a resource that translates whistle recipes to timed measurements for legumes, meat?

Yakhni Pulao is typically made with mutton and tastes best with that. However if you want to make it with Chicken do not pressure cook the chicken ...it will become too soft 😊

Oh! To prevent that 1. Whisk the curd till smooth 2. Switch off heat/flame 3. Add the whisked curd slowly and mix it thoroughly 4. Now switch on heat on low, mix and cook on low heat for 3 mins till oil separates. This way the curd should not curdle.Hope this helps 😊

Hi, The recipe looks delish!👍👌 Do I pressure cook the meat if I'm using lamb instead of mutton as lamb is very tender?

You can pressure cook the lamb initially with 2 whistles....on high heat till the 1st whistle and then on low heat till the next. Switch off and allow the pressure cooker to release pressure. If you want, instead of pressure cooking the meat for the Yakhni/stock, you can also cook covered in a pan on low heat 😊.
