Hey, from Kenya. Basically I just eyeball the ingredients to make mandazis. Noticed what you made were puff puffs/ kaimati (as we call them in Kenya) they are light in consistency. Our mandazi recipe consistency is like bread dough, firm Ingredients: self raising flour, an egg, yoghurt (plain or vanilla) if you're using plain yogurt you can add in vanilla essence (about half a teaspoon) then butter (about a heaped tablespoon), sugar (adjust according to how sweet you want them) warm water or milk (for consistency) Method: 1. Rub in flour, sugar and butter till crumbly 2. Make a hole in your mixture, then add the egg, yoghurt, vanilla essence (if you're using plain yogurt) and a bit of milk 3. Rub it all in adjusting the consistency with milk (be careful not to add too much) for about 5 minutes 4. Once you are satisfied with the texture, cover it for about 30 minutes to an hour for it to rest. 5. Put oil in a pot and place it on medium heat for it to heat up while you are rolling your dough and cut into desired shapes. 6. Make sure the oil is hot before you start deep frying 7. Deep fry till golden brown 8. Serve while warm 9. Bon appetit!
