Hi Gavin, Great show. Like you mentioned a good use for the first basket type is in making Maltese Cheeses ( Gbejniet tal-bzar). I found 5 baskets work out perfectly with a standard 3 litre container of full cream milk (no cheese cloth needed) when the cheeses are dried they end up being 60mm dia x 25mm high.

Here in the States, we have an option for the hoops, by going to Michaels, Hobby Lobby, or JoAnn Fabrics or many other locations and getting various sized adjustable plastic or wood embroidery hoops. Then cut out the proper length and width (cheese height) of a white plastic sheeting, and be able to press, turnover, and leave in the mold indefinitely (soft cheeses), or until a hard rind develops, then remove the hoop.

I make all my drying mats from the yarn looping (forget the name) sheets from Hobby Lobby. Great place to DIY.

So you're using 2 sets of hoops to accomplish this? I'm having trouble picturing it.

@@-8_8- 1 hoop size, then find a long length of width of white plastic (like old 1900s plastic shirt collar of various width height. Design the proper hoop size, and wrap and stand up the white plastic inside of the hoop. Put your cheese inside, and continue turning over entire hoop, plastic, and cheese for each turn. When rind is properly set, then remove hoop and plastic.

Hi Gavin, I found a basket about the size of your favorite one on this video but it only has holes on bottom. Is it necessary to have holes on sides too? (for swiss or buttercase) If so, I can drill some holes. Thank you! Good videos by the way!

I have been looking for the 165mm Cheese Basket with Follower in the United States. From watching your videos it appears to be a great go to mold for various cheeses. They don't seem to have a basket of that size and the spring might be hard to pick out from some industrial web site. Do you have your products available in the United States? I am assuming that the shipping from Australia to the United States is horrendous. If not do you have recommendations of equivalent products?

I have a really nice press with a graduated spring but it came with hoops. I don't think the whey drains a fast as it does with your baskets. Should I be pressing longer than your recipes?

No, you don't and no I haven't. They are used for moulding soft cheeses.

Been looking online on Amazon to get Cheese Molds but they all seem small.. Are Tofu Molds the same thing as Cheese Molds? Where did you get the Lg Rectangle molds? I didn't see them in the store when I searched on the little link that came up on the corner. Thank you!

Not the stuff in plastic, thats usually had stuff added to it to have a proper texture taste and color. Its usually too soft to age

My recipe calls to flip the cheese in the basket after 24 hours. But i can't get it out without ruining the cheese. Is there a trick how to get the cheese out nice and easy? Thank you

Cover mold with cheese cloth before filling with cheese, then later, use cheese cloth to pull cheese out of mold without much damage to cheese

No, as it has no bottom, the cheese will just ooze out of it. Baskets are used for pressed cheeses
