I'm an older man that took up bread making a few years ago. Just in the past couple of weeks I made my first sourdough starter and first loaf. I was surprised at how well it turned out. I watch these videos regularly to Learn all I can. I have to say, this video of yours is the best I have watched ever. You explained everything so well and the video of step by step was perfect. So far, I’ve been able Yo follow you to the letter. My timing is still off though, I will figure that out too. But when I thought it would be doubled was around 4am. Even though it has doubled, it’s still too sticky to form. I panicked and put a tiny bit of flour on the one blob, instead of ball that’s what I have. So I stopped, let it set for 15 minutes and I’ll start again, trying to form it into balls to put in bowls. I’m gonna have to refrigerate it after that, before I can bake it. I have the sandwich bread behind this and I’m doing two loaves. I let it proof on the counter as well and it will have to be formed and then put in the fridge and brought back out when I can bake it. 😢

when you make sourdough sandwich bread you say put it in a bowl and leave out on counter over night but when you go to cook it you dump it out of bowl and say it was in the fridge when did it go into the fridge and how long was it out on the counter

I made the Seeded Boulle today for the second time. Beautiful and excellent but I baked in starting in a cold oven with a cold DO. 50 minutes at 450 closed then 10 minutes open to 210 degrees. Perfect! Thank you!! This cold oven thing just blows me away!!

This must be one of the absolutely best sour dough bread class on youtube. I have just started my sour dough journey and prepared my first starter which took almost three weeks to germinate. I have baked a simple loaf with it once and now I am ready for more advanced steps after seeing this video. Thank you. You have the no hurried no stress two day process which I like. The other good thing was, you said proofing could be done at room temperature over night. My fridge is overloaded so no space there. My other worry was the preheated Dutch oven that is waiting for an accident to happen, i.e. major burns and you said we could use cold Dutch oven but the crust may turn out thinner. I'd rather have thinner crusts rather than burnt hands.😂 Thank you once again and one more thing, thank you for measuring in grams rather than ounces and pounds.

Love this video! I had lost 127cm of my small intestine because it had multiple twists…that was a scary one and I almost never made it and I also have IBS! Sourdough bread will be better for me, but this is the second video I watched! Yours makes more sense and not so much fuss! Our water is hard here, so would that be ok to use? You are adorable BTW! I also have stomach and intestinal issues and so I started making Sourdough bread about 9 months ago and it really has helped not only my digestive health but also my mental health. I’m working on making my own Kombucha now so adding that as well should make my digestion even better. This ladies Sourdough products look so good. I just found her this morning and I can tell she really knows what she’s doing.

Because I don't love storing my bread in plastic either BUT find that it tends to be the best way that I've found to store it. I like to wrap my bread in parchment paper and then place it in a large zip lock bag. I feel like it keeps my bread good for the longest amount of time. Also great for freezing and thawing.

Could you please make a post, if you haven’t already, on preparing a sourdough starter, (i.e. favorite recipe, tips ‘n tricks, etc.)? It seems like there are multiple schools of thought on what flour one should use (namely, wheat v. all-purpose) and such, so we’re a little uncertain…🤷♀️😊

I haven't made a video on that yet but I probably should! I personally use all-purpose flour in my starter because it's the most flexible for making different baked goods. You can use all-purpose, whole wheat, rye, even gluten free!

I have been so hoping you would do a bread video. This was awesome! 4 beautiful styles that everyone can enjoy. So you know the next request from us is for you to film a tutorial on making your own starter, right? 😊 I know we can purchase a kit but for some of us it would be more satisfying to make our own. I have done that before but eventually threw it out because it just wasn’t performing well. So I’m back to jarred yeast which makes a lovely boule but I really miss the sourdough flavor. I’d like to give a starter another try and have a feeling that your technique would be very clear and easy to follow. This video certainly was. Unfortunately many of the videos out there on starting your own sourdough starter are so complicated. Hope you’ll consider it. Thank you again for another fantastic video!

I would like to try the sourdough sandwich bread. You say to leave the bread on counter overnight but the recipe says to let it ferment in the refrigerator overnight or roughly 10 hours. My starter is ready to use but it is morning. Can it sit in refrigerator more than 10 hours. And do you have to let it come to room temperature before you divide it and place in loaf pans?

Looks great! I want to try making the buns but have a question. Initially you said you leave the bun do on the counter overnight but then you said it had been in the fridge and was cold. Can you clarify, counter overnight or fridge overnight? Thank you

I just started sourdough & I have had problems with raising & getting tooo dark & overdone on the bottom. It’s hard when your recipes tell you a temperature & time to bake but seems to be too much heat or timing is off. Anyway I’m determined to master this sourdough stuff, so I’m very happy 😊 to find ur channel because it’s so relaxing & refreshing to see how easy you make it look & it’s not some huge chore that you have to babysit all day & night. Try putting an empty cookie sheet on the lower rack beneath your dutch oven. That's helped me not burn the bottoms.
