I’m a first US born generation, my parents are Mexican. I pride myself in knowing how to cook Mexican food from scratch, with no additional artificial seasonings. I only use salt, pepper, herbs, and spices. I like to wander and learn how to cook real American food. I’m so happy to have stumbled upon your KZbin channel. You make your recipes seem so simple, yet, so appetizing.

If you want real American food then southern cooking is a good place to start, i.e. this channel. Folks further north do some different things, though I can't say all of which stand out, maybe something like Clam Chowder. Southern food is the worst for you but best tasting, but that's my biased opinion.

Cube steak! My siblings and me were all living far away from my mother in upstate SC. ( my family relationships were strained ,to say the least.) She developed cancer and I got in the rotation of taking care of her. I would fly in from Texas and stay with her. My son visited with us a while he was in the Army just back from Afghanistan. My mother had stopped cooking..... but I remember how happy she was cooking cube steak for her grandson one evening. What was previously a simple meal was a mystical experience this time and we all sensed it. I hear "Cube steak" and I will always remember this

This video brought back memories of my mother. I was a grown man before I ever heard of cube steak. However, my mother made what we called a country-style steak. Instead of using the cube steak that you see in grocery stores today, she used round steak that she would cut up into large chunks. Then she had a small cast aluminum hammer that she used to tenderize the meat. She would put the chunks of steak on a cutting board and beat them like she was mad with them. Then, she would brown the steak in a large cast-iron frying pan the same way you did your cube steak in this video. Once it was browned, she would take it out and sauté some onions and make a pan almost full of gravy. Then she would return the steak to the pan and cover it and let it simmer until it was fork-tender. Add some rice and small baby lima beans and you had a meal fit for a king.

My mother 100% Polish, would make this the exact way as your mother using round steak and lots of onions...cooking it entirely in her cast iron pan. It was called Steak and Onions. The tastiest dish ever....outside of her Polish delicacies of course. Fondly remembered. 😍

That looks like some fine dining. Mama used to batter her cubed steak in buttermilk and flour which gave it a wonderful flavor. I just had some buttered biscuits with apple butter so we all ate pretty good tonight. I put cubed steak in the crock pot sometimes with onions and cream of mushroom soup which is pretty good too. Thanks Tipper for showing us how it's done.

Here in Oklahoma, my great aunt would fry quail and "smother" it with this same gravy. I sure do miss her and all those years ago! 🤗❤️🙏

Looks good, Tipper! When I was little, we never had anything like this, because my father was a firm believer that whiskey money should never be wasted on 'food'. But once, Mama got ahold of a round steak (Lord only knows how), and she used the side of a saucer to beat it to to where it resembled what I later called it a "minute steak". She then fried it like you just did and made gravy. Well I would have loved anything at that time, but I still remember that beat-up round steak. Actually, I hadn't thought of that until your video. Your childhood sounds similar to mine. We very seldom had meat. If it hadn't been for our garden, we would have starved. We sometimes would have a chicken that we killed or Mackerel Patties. My mom was a great cook but was limited on what she had to cook with.

@@CelebratingAppalachia Well, she did the best she could with what she had. We grew up on beans and potatoes - biscuits and gravy... the basics. Every 'GREAT' once-in-a-while, my father would get generous (when the alcohol just kicked in, just before the "mean drunk" stage), and he would spring for a delicacy of a pound of ground beef. Well, with 5 brothers, 2 sisters and the 2 parents, one .lb of ground beef didn't go very far, so Mama would mix a loaf of white bread and some water with it, and it actually fed everybody! Pretty dang good hamburgers too!

Cube Steak looks delicious, along with everything else. I used to be a butcher at the old East Tennessee Packing House in knoxville Tn.in the mid seventies.Looking at those Cube steaks, brought back a lot of good memories. Cut and cubed thousands of pounds of cubed steaks 🙂.Thanks for sharing your cooking tips for a tender cube steak,Tipper.

I made this Sunday! We use one of the alternates you suggested to chicken stock, beef bouillon, with water, flour and those yummy bits from the bottom of the pan. It is a delicious and truly easy and foolproof method. The crockpot does most of the work and the biggest part of the mess is cleaned up long before supper. Thank you for sharing this! I'm sure it will inspire many.

My grandpa made this when I was a child. I loved it and remembered how to make it. He’d cut up onions and fry those up till translucent then put the floured cube steak in. Fry it until golden then add the broth and garlic powder and salt and pepper. He’d use a few dashes Louisiana hot sauce to add a complexity to it. We used a little milk in the gravy as well. We’d simmer it for an hour or more then serve with rice or mashed potatoes. Someone once told me online this particular recipe was something they did in Louisiana.

I love this! I do mine almost the same way but in the oven and I add sliced onions to make an onion gravy and bake it, covered, in a 350 oven for 1 1/2 hours. It's so good and like you said, foolproof. Delicious looking dinner, thank you!

My momma made wonderful cube steak, but like you I could never quite get the hang of it. So, I quit making it also. I may have to try Pam's recipe. I just love your videos. You are definitely down home people 🙂

There's not many people that cook like this anymore. I grew up here in Belmont NC I'm 62 and this is the kind of food we ate all the time. Thank god your showing these young people what southern food is all about! My Mom used to make my all time favorite, Pinto beans, fried potatoes, cold slaw and cornbread, and she would have a small plate with fresh tomatoes and sliced onion on it. It makes my mouth water just thinking about it...Rick

Richard I also grew up in Belmont (east end) and I'm 72. My Granny made everything from scratch and it was great. Cornbread and pinto beans were my favorite but the biscuits were a close second. Don't forget the fried livermush.

Omg yes!! That’s the eaten right there I’m 63 and still cook this way!! I’m from Indiana but when I was 20-24 years old I lived in Knoxville tn and I learned to cook so many things from those wonderful southern women they knew how to keep a poor family fed!! And I’m very grateful for them

My mom and grandma always made cube steak. We had it with milk gravy and white bread and fried potatoes. I can make all of that, but it just tastes so much better when my mom makes it ❤️

@@connieparker8896 That's so true. The other day, I made myself some macaroni and tomatoes. Macaroni, tomato sauce, butter, salt, and pepper. My mom makes it exactly the same! I tell her that hers is better. I tell her every time that it's because she made it. The only things I got her are macaroni and cheese, homemade spaghetti sauce, and grilled cheese. 🤣

I do my cube steak similar to this but I use Beef broth instead of Chicken stock and put mine in the oven in a glass dish and bake at 350° for about 30 minutes then lower the temp to 300° and cook for one and a half to 3 hours with foil over the top of it. I also sometimes saute some chopped onions in the pan after I brown the meat and add them to the gravy.

I just watched this video last night and made this meal for supper tonight, with the same sides that you made. I never liked cube steak before this recipe. It was very good! I didn’t have any stock so I used water with chicken and beef bouillon in the gravy, and added some onion & garlic powder. That was the most delicious and flavorful gravy! Thank you so much for sharing this recipe ❤

Im glad you shared your Pam's recipe. I've always messed up a cube steak. And my 1 attempt at country fried steak was messed up too. So I always order those two when we go out to eat. I have a crock pot , who doesn't ? Im going to give it another try.

We always made cube steak. Wr made it a variety of ways. My dad's favorite was to simply dredge it in salted flour and fry it. It gets crispy on the edges but if you don't do it right it does get tough to chew! This way looks delicious. Thanks for sharing.

I do something very similar, Tipper. I saute some combination of peppers, mushrooms, & garlic before adding the flour, make the gravy with beef stock, return the meat to the same pan, and simmer covered in the skillet on very low heat for at least 30 minutes on each side, the longer the more tender. No recipe. I sort of developed it myself. If I'm feeling lazy and want a whole meal in one pan, I add some cubed potatoes for the last 20 - 30 mins, and maybe some frozen peas for the last 10. A favorite supper.

Another option for getting the meat extremely tender is available if you take some time to choose your meat wisely. Typically the best cut for cube steak is going to be a round steak, once you have picked one out that is large enough for your purposes, take the package to the meat counter and ask them to run the steak through the cubing machine for at least three passes. This machine creates all of the tiny little cuts that are in the meat these cuts serve to break up connective tissue and other tough bits before the meat is cooked. Most prepackaged cube steaks are only passed through once, the extra passes allow more connective tissue to break down which results in a more tender end product. My favorite version of this recipe has always been the Paula Deen version that featured an onion gravy, yummy.

I had watched this video some time ago, but when I found some packages of cube steak in the freezer, I knew I wanted to follow this recipe and fix it for friends tomorrow. I read the recipe in your cookbook but watched the video again, too. I look forward to serving this with Parmesan crusted squash and zucchini fresh from our garden, along with some Cherokee yellow wax beans and peach cobbler for dessert. Tipper, you’ve helped me love to cook again.

I never actually knew what cube steak is! Looks great. I'm from Coastal North Carolina. It's interesting to see how the appalachian food blends with the traditional african american food (basically recipes that originated from slaves) and the old tidewater region/colonial/european-influenced recipes around here. I grew up eating food that resembles your recipes at one of my grandma's growing up. At the other grandma's house, I guess I would describe the food as more European. There was casseroles, sautes, and even syllabub! I try to keep the traditions from both sides of the family alive even though I don't really cook all that much these days.

People get it backwards. Slaves were stripped of their heritage and were fed according to what their masters let them have. Fried chicken was a scottish idea even though chickens came from east Asia. Fried fish was a Portuguese idea. Fried potatoes were a French idea even though potatoes were brought over by the Spanish from South America. Just about everyone had their own way of preparing meats. The word for bbq may have come from the Carribean but things like rotisserie or smoked meat and pulled pork and potted meats in lard were most definitely European ideas. We may have gotten corn from the natives, but the British made cornbread. Then the natives adopted that. Natives did have their own unleavened breads which were more like tortillas. Not the fluffy cake like bread.

@@numsiskit innards were used by europeans too. Offal was used in various dishes. Fun fact...there was an actual Humble Pie (originally called Umble pie). One of my great-uncles used to eat mountain oyster. Fried pig testicles with gravy! 😆 I got to credit India with mustard greens and Greece for the Collared greens. The British brought that here.

@@EpochUnlocked I'm talking about recipes, not ingredients. Are you saying collards seasoned with fatback and chitterlings and were prepared by slavemasters and simply fed to the slaves? I think it's unlikely. The masters were eating the high end cuts.

@@numsiskit Fatback was extremely common for european dishes. Chitterlings are pig intestines....pig intestine has been commonly used as sausage casings. Eating the intestine in a stew wasn't uncommon. What am I missing here? The africans that were brought over here were from nomadic tribes that didn't have a history of raising domesticated pigs. So they had to get their recipes from someone. House slaves were a thing on plantations and had to be taught to cook according to their master's wishes. Poor folk who didn't have slaves were in the same culinary boat when handling poor cuts.

I love it that you called your granddad(?) Pap. We called my great grandparents Mam & Pap (Mammie & Pappie). My grands Nana & Pa & Grandma & Papaw. I loved driving through part of Appalachians couple years ago. It’s so much like NW & Central Arkansas where I’m from:) Gonna try your recipe. It’s a lot like how I do pork chops w mushroom gravy. I brown, remove put in baking pan, cover w a layer of white onions, sliced mushrooms, a mixture of mushroom soup & 1/4 can milk, top w parsley! Cover w foil & cook about 20 mins. Voila! I’m gonna try it on stovetop next time! Ty girl!

I'll have to make this. It's been a long time since I've had cube steak. My brother RIP, Loved it. He called it chicken fried steak. He told me and I never will forget a few decades ago. He was in the navy overseas in Japan. He ordered chicken fried steak and they brought him some kind of fried chicken : )).

Looks delicious. Cube steaks were in regular rotation at our house growing up, too. I think they were very inexpensive back then. My mother just fried them, but didn't braise them afterward, so they were _always_ a little tough, but we loved them. Can't wait to try your way (Pam's way 😆). A tender cube steak would be a treat. I might even make them for my brother and sister who surely share my memory of them!

Thanks for the memories! When I went off to college, mom and I sat and wrote out several of my favorite recipes. Your video makes me wonder if she learned to look our version of this dish from my dad's mom rather than her mom. Dad was from Appalachia and mom from up north. It was always tender and easy to make in a single pan. So good with all the gravy made in the same pan without ever removing the meat. Mom would add a sliced-up bell pepper, onion, kitchen bouquet, bullion, catchup. She'd also drag the meat through egg before putting it in the flour. After the meat was browned, the remaining flour was dissolved in water and added to the pan. It simmers until the meat is done and the gravy has thickened. I've not made it in a long time but I'll make some this weekend. I bet it freezes really well too! Thanks for reminding me of these tastes from a place I love. It is also wonderful having her recipe in her handwriting. So glad this was before things got typed up.

I will try this. My mother used to pound peppercorns into cube steak and fry it at a high heat in olive oil with butter in it, then squeeze lemon juice in the pan and oregano ..... it was so good and I still make it - but I agree sometimes it's tender, sometimes not so much - so I will definitely try this.

Chicken and pork ribs cooked the same way is wonderful . I don't use a slow cooker . I put the chicken or pork ribs in my dutch oven and simmer till done. Our favorite meal when camping or outdoors .

To this day I make cube steak weekly. I have 4-5 ways I use it and all of them are my families favorite meals we have. We were so poor that’s all we even had growing up. Cube steak was THE thing we looked forward to.

I’m from the East Coast and this is how I make cube steak as well. It keeps it from having a chewy texture. I also make liver and chicken gizzards like this.

My mom gave me a cast iron pan about 15 or so years ago she had it for 40-50 years, my sister got the skillet our Grand Mother owned which was smaller. I’ll be looking to bless a family member with my skillet in a few years.

I was taught to boil the cube steak to make it tender, then brown it in crisco (lard). Then use the water from boiling the meat to make your gravy, in the pan you fried it up in.

This looks so good! In fact, I thawed out some cube steak yesterday, and when I came in from church today, I made this dish. My cube steak and gravy are simmering away in the crockpot right now. We'll have it tonight with mashed potatoes, whole kernel corn, green salad, and homemade biscuits (I make my biscuits the same way you make yours.) I also made your peach cobbler recipe yesterday, and my family loves it! We'll have it for dessert with a little vanilla ice cream. It will be a feast! We grew up eating this! Anything simmered in gravy is good and tender. Pork chops or fried chicken…yum!

This brings back the memories. My Mom and Mother in Law cooked this way when I was a kid (country Boy) in the cotton fields of home. My mother in Law could make the best pinto beans I have ever tasted. Both were excellent at making biscuits and corn bread. We had a cook (Peanut) in Berlin who made biscuits almost as good. Peanut's biscuits went well with the SOS.

That looks so good. Especially the fresh corn and tomatoes. I tried to fix cube steak when I found some awhile back. It just wouldn't get tender. I should have put it in the crock pot. I will do this recipe when I get it again. Last night my husband cooked dinner. He cooked salisbury steak with mushrooms and onion gravy and mashed potatoes. His was better than mine!!

I make really good cube steak, I start out the way you do by browning both sides of meat, I do use more cooking oil than you do, remove meat after browning, stir in salt, pepper and flour to make your thickening base, cook until flour starts to turn brown, gradually add water, while stirring, when starting to thicken, add a little Kitchen Bouquet gravy browning, add meat back to skillet and put a lid on it and simmer until it's as tender as you want. I usually cook at least 2 hours. Mine turns out perfect every time.

My husbands grandmother and mother both made this. It was always referred to as “round steak”. I guess that’s the only way they cooked round steak. I have made it myself on top of the stove like they always did, but my results were like yours. Sometimes good and sometimes not. I will definitely need to try the crockpot version.

This was my grandma's specialty. I think she always fixed this with water instead of stock, and in the oven instead of the crock pot. She always served it with mashed potatoes and green beans. I wish I'd paid more attention when she was making it. My version is adapted a family cookbook, that was compiled by a relative 15 years or so ago, and the steps are pretty similar to yours. The main difference is that I cook it in a cast iron dutch oven in a 300 degree oven for around an hour.

My mother used to make cubesteak, she never used a crockpot, but what she did was add a little water to the pan once the cube steak was browned or sometimes beforehand after the pan was hot enough. She always got good results. If you are wondering how they knew when food was cooked, when they didn't have clocks snd they were frying etc. The old folks would sometimes sing a song of hum a tune to themselves that had a known length and speed and when the tune or song was done it would be time to check the food for doneness. They also did this with other things too, like drying some products or when glue was drying etc. Instead of a clock they would use songs to measure time.

This is how my mom made it too when I was growing up in West Virginia, only she'd put it in the oven because we didn't have a crock pot. She'd make it with cube steak, round steak, or if the hunting was good, deer meat. This is what we were having for dinner if we were having steak. I never had a no-gravy steak until I was in high school and in a restaurant. But this is my favorite kind. My mom used to make us our favorite meal for our birthday and this was what I always wanted. I have tried but never quite got it as good as hers, but then again, she always had a special touch. Like all our moms did, I guess.

used to cook it down in South Carolina for me my grandma I have cooked it tonight after watching your video and yes ma'am that hit the spot it's funny how the gravy turns brown I guess it's from cooking the flour but not much longer like 30 more minutes and I'm eating that'll be my five hour in oven also fried some chicken livers and put them in the gravy pot cooking with the steaks yum yum

Cube steaks in the crock pot with onion. Brown 1st. Stick them in the crock pot with sliced onions and some water and let them go for a few hours. At the end take packets of brown, mushroom, and onion gravy mix with some water, add to the pot. Cook for about another 30 minutes and they will just about fall apart. Mashed potatoes with cube steaks and gravy. Yummy

I tend to do the same thing but make the gravy in the skillet as you did, then put the cubed steaks back into the skillet, cover, heat to lowest setting, and let it simmer.

Ok I wanted to try this since I saw your video.Mine was always decent but not like my granny’s,Mine didn’t look as good as yours after in the pan.My wife said I got the pan too hot.Anyhow,I made the gravy,put it in the crock pot,and fixed corn on the cob and potatoes,and taste just like granny’s used to.Thanks for sharing.😃

Looks really good. It''s true that cube steak can be ruined by overcooking. I solve this by first browning the steak as you did and removing it Then I slice onions and make a bed for the steak. I make a rue with butter and flower in a separate pan and add beef stock. Then I put the steak on top of the onions and add the gravy over the meat and onions and let it cook in the gravy on low heat. About 5 minutes before it is ready i add mushrooms and raise the heat a bit with the lid on until the mushrooms wilt Now you have a nice steak with a beefy gravy with onions and mushrooms with mashed potatoes and peas on the side.

I love cooking with cast iron I get good results with it and if it's cured properly it provides a healthy non-stick surface provided you use edible oils to cure it with. And cast Iron is very durable, I've seen cast Iron cook ware in Antique Shops and Flea Markets that are over 75 years old and are still in useable condition. I also like the fact that cooking with cast iron helps you keep a good muscle tone in your hands and forearms and making and stiring gravy can be a good way to maintain muscle tone and strength in the forearms, plus you get something tasty to eat once you are done.

I cut up onions and use beef stock while making my gravy and then add the cube steak back in the same pan and let it simmer until it is really tender...

My grandmother browned the cube steak, removing it from the cast iron skillet and made gravy with the “drippings” as she called them. Then she put the steak back into the skillet, turned the heat down and let it simmer until it was tender.

You brought back some memories of being a teen and going to my cousins and making cube steak and gravy. It was more of a milk gravy and we fried the steak in smaller strips and ate it that way. I will definitely try it your way soon.

my great aunt makes cube steak so different almost like a crock pot, all mushy.. I like to simmer it in the breading then after all done turn it up a bit, redo them in flour and fry outside to crispy . then use grease for gravy

My daddy didn't like hotels nor I expect camping so every year for his 2 weeks of vacation we would visit my mother's mom and his mom. Mom's mom lived in Morgantown, West Virginia and daddy's mom in Oak Hill transplanted from a mountain town called Thayer, West Virginia. My daddy's mom made this but for some reason she called it Bucket Steaks. She sure could cook, her kitchen was huge and she never had a crockpot. I watched he make Bucket Steaks. I make them the same way you do exceptI pull the steaks off the fire and I place them in a bowl to finish frying the remainder, then I do what you do that is fry the flour and I pour in a can of beef stock. then I add all the steaks back into the pan Including any juice, I'll add more water, but only enough to the barely cover. Reduce to low cover and simmer for 30 minutes. I live alone and I get the large package of cubed meat, for the leftovers.

I make this alot. But I use ground meat. Hamburger, sirloin, turkey or pork. And sometimes I use rice instead if potatoes. And cream of mushroom instead of Gravy. This is such an easy meal. But good.
