Ingredients: For the crust: 1 cup all-purpose flour 1/4 cup granulated sugar 1/2 cup unsalted butter, softened For the lemon filling: 1 1/2 cups granulated sugar 1/4 cup all-purpose flour 4 large eggs 2/3 cup fresh lemon juice (about 4-5 lemons) Zest of 2 lemons Powdered sugar, for dusting Instructions: Preheat your oven to 350°F (175°C). Grease a 9x9-inch baking pan or line it with parchment paper, leaving some overhang on the sides for easy removal. In a medium bowl, combine the flour and granulated sugar for the crust. Cut in the softened butter using a pastry cutter or fork until the mixture resembles coarse crumbs. Press the crust mixture evenly into the bottom of the prepared baking pan. Bake in the preheated oven for 15-18 minutes, or until lightly golden brown. While the crust is baking, prepare the lemon filling. In a large mixing bowl, whisk together the granulated sugar and flour. Add the eggs, lemon juice, and lemon zest, and whisk until smooth and well combined. Once the crust is baked, remove it from the oven and pour the lemon filling over the hot crust. Return the pan to the oven and bake for an additional 20-25 minutes, or until the filling is set and the edges are lightly golden brown. Remove the lemon bars from the oven and let them cool completely in the pan on a wire rack. Once cooled, refrigerate the lemon bars for at least 1 hour to chill and firm up. Once chilled, use the parchment paper overhang to lift the lemon bars out of the pan. Cut them into squares or rectangles. Dust the tops of the lemon bars with powdered sugar just before serving. Enjoy these refreshing and tangy lemon bars as a delightful dessert or snack! Feel free to adjust the amount of lemon juice and zest according to your taste preferences. You can also add a little extra zest for a more intense lemon flavor.
