Is there a particular reason why she becomes anxious on the lunge line?

There’s no one reason I can point to, but historically she’s been a really anxious horse because of how she was trained before I got her. The people before me meant well, but trained her in a way that shut her down until she couldn’t take it anymore and exploded. Even after two years of owning her and trying to help her work through the anxiety, she still sometimes goes 0-60 like this and gets stressed and worked up until she realizes what I’m asking her to do isn’t going to hurt her.
