I don't know if anyone mentioned in chat during the stream, but the reason the Alpha's kept seeing you even while hiding is because every pokemon becomes more alert if you fail to catch it too many times, and for Alpha's it makes the their already high perception even higher to the point of completely ignoring the stealth bonus from the grass, from what I understand.
