Apparently Carbon Steel can develop a similar nonstick coating that cast iron is known for... And that coating is awesome by the way...I have some heirloom cast iron pans I pull out on occasion and they work better than the stuff that's actually called nonstick.😂 I would like to see if carbon steel works the same though. When I handle my cast iron, I take an organic, High Temp oil, and then get the pan way too hot to cook with, and spread a thin layer of that oil over the whole cooking surface... It creates a ton of smoke...but it works...once it's done smoking I turn it down, and then after it's cooled off a bit, I'll finish bringing it down to cooking temperature with a dose of water...which I immediately remove... And that actually worked beautifully this morning... It cleared up the whole residual matter that wasn't a part of the surface and left me with a nice clean cooking surface... It was initially too cold afterwards to actually cook the food properly... But I adjusted the heat output up again, and that took care of that. Cleaning up afterwards was basically the same as before I set up for the cooking... However I only did that because the pan needed some TLC after not being used for almost a year?

Stainless steel pans are usually used for searing or for making crispy chicken. Eggs and fish are a delicate foods for which you need a NON-STICK PAN especially if cooking with cheese. Ceramic coated pans are the best! I used to have stainless steel pans and they got destroyed. I still have stainless steel pots though. They're great for pasta, ramen, making homemade popcorn!
