Treasure these times! My mom was diagnosed with cancer in December and she passed away mid April. She was only 69 . It went so fast. I’d give anything to make spaghetti with her. thanks for the video

I've watched a jillion cooking shows and when they taste their food at the end and ooo and ahh, I'm unmoved. But when you served up the spaghetti and sauce and bread and meatballs, I wanted to crawl through the screen. I think it was because of the real people involved and seeing the effort of each step ( squeezing the garlic, etc.) I was more a part of everything going on.

If anyone is interested in a fantastic plant-based Bolognese recipe brimming with umami flavor, here's my version I've been perfecting for almost four years: 1. Grate a block of tofu and spread it on a towel. Roll it up and wring out as much water as possible. 2. Fry the tofu and a diced onion with a pinch of salt in your preferred oil. Cook until it's almost crispy but not too dry, stirring occasionally for a nice char. Be careful not to overdo it but take your time. 3. Add a diced carrot and celery stick, season with a little salt again, and cook for another 5-10 minutes. 4. Stir in about 3 tablespoons of tomato paste and a chopped clove of garlic. You have to stir and mix in the paste frequently until it's perfectly mixed in. Fry until caramelized. Perfecting steps 1-4 may take a few attempts. The key is to caramelize well without drying out or burning the mixture. 5. Add 2-3 tablespoons of soy sauce (adjust for saltiness) and let it simmer for a minute while stirring. 6. Pour in 250ml of tomato puree, the same amount of water, and 1-2 teaspoons of your preferred herbs (I use an Italian blend). 7. Simmer for about 20 minutes until the water evaporates and the mixture starts to caramelize. 8. Stir in 1 tablespoon of nutritional yeast and optionally, 1 tablespoon of almond butter. 9. Adjust the consistency with some pasta cooking water. 10. Mix in your cooked pasta and enjoy!

This sounds delicious. I particularly like that you caramelize the tomato paste; not a lot of people do that, but it helps bring out the sweetness and reduce the tinniness from the can, if you’re using canned (as is my understanding). What’s the function of the almond butter, just out of curiosity? I’ve never put nut butter in my pasta sauce, so I’m quite interested to know.

It's my general opinion that the "secret" to cooking is herbs and butter (or your oil of choice). People who never cook think it takes a lot of effort, but really there are many, many things you can make that will taste delicious if you just throw on some herbs and butter.
