Love the creativity! I’m viet and my partner is part Italian. Might surprise him with a version of this one time. Perhaps id skip the tomato in the ragu and just cook a classic thit kho trung subbing pork belly for mince. Then cook down the mince and break up the stewed eggs into the sauce. Still keep the mozzarella and the top layer of tomato sauce for that hint of lasagna. The meat layer will be strong but the laughing cow bechamel will balance it out. Finishing off with corriander.

Supergarlic sounds great to me. I love my garlic as big as possible, much easier to peel. Unlike my mom who often argues that the smaller one smell stronger, she bought these tiny garlic have the side of a toothpick. Eventually finally convinced her to give up on these because if you want stronger smell you can just ... put more garlic in.

You worrying about the rain coming is so relatable. Sometimes the rain waits until I'm barely 1km from my house and it pours on me. The weather in South Vietnam is a very fickle thing. Also, I think the thing (commercially available) in Vietnam closest to lasagna sheets is wonton skin.

For me, fresh pasta is always preferred. However I would not put my pasta in ice water right after cooking. I want my lasagna pasta to be dry so it can absorb the juices from my sauce. Right after cooking the pasta I would put it on a rack to dry out some of the moisture before using. I see here that both your sauce isn’t very saucy but rather thick. I believe that if you let your pasta sit in water it becomes very soggy which I is what happened to your pasta.

remove the cheese to make less western. you could have used banh cuon sheets, cha lua, dried shallots. tomate meat sauce would be like 30% western. white cheese sauce or cottage cheese can be replaced with soft tofu, tau hu non. anything with fried dried shallots will be vietnamese, especially with nuoc mam chua ngot ot
