OK, so you visited the new modern Estonian restaurants.... and Eesti McDonalds at Viru Gate.... You did not visit what I remember from the 1990's as typical Estonian restaurants. Those served pre-configured plate meals with: 1) A protein 2) rice or potatoes 3) a salad 4) a different sauce on each of the three items. And absolutely no substitutions. I would want to pair chicken or pork with the other rice / potato offered on the menu with another plate meal.... my wife (Estonian) would remind me "No substitutions in Estonia." We have not gotten there yet, but we learned of a restaurant that serves meals like I remember: Halliste söökla. It is in the town of Halliste, which is in Viljandimaa. Look it up.... ERR did an segment / review of it.

You have absolutely no idea what you talking about. If you visit some small town lowest class diner in the 90's that does not mean you know what actual restaurants in main cities are. You should look up what söökla means. It's pretty much where poor people go for a cheap lunch, or where school kids go for lunch, that is also called school söökla. Besides the location you point out is pretty much as rural area as it gets, it's like small village that don't even have restaurants, all it has is probably that small diner and you expect some world class restaurant experience ...sorry but you just clueless. In the 90's there were restaurants that most people can't even get in without knowing some people or paying a lot of money to get in, you got no idea.

I think that McDonalds slow-food restaurant is very accurate and I know why. I don't go to fast food place very often, perhaps once in 5 years and most Estonians are the same, so that means they are not as popular and they can't just pre-make everything in hopes that someone will buy it before it gets too old. SInce menu also have many more items, it is even more complicated. Basically in Estonia fast food chains become pretty much a-la-carte chains with non a-la-carte fast food if we could say that and that is why you have to wait longer.
