Hey I don't usually comment but I wanted to say that your videos are amazing, the general presentation, the videography, you talk about things clearly while explaining why things are done in that way (which I love), and you give off really good vibes. This video made me go out to my local butchers to purchase a rather expensive chicken, I have butchered it and made the broth today (its beautiful), the chicken is sitting in salt in the fridge and I am excited to bring it all together tomorrow, you are a class act mate I have subscribed and I am exploring your other videos, keep up the fantastic work, Thankyou -H

I made this tonight and it was really, really good - quite delicious. I especially liked all of the fabulous sauces. I used only the chicken breast (we are only two people) which I steamed with some ginger and green onions (to 150 degrees) then let it rest for 10-15 minutes and it came out very tender and delicious. For me, the rice was a little more fatty than I like, but then I am very careful about the amount of fat I put in my food, so next time I will probably do a bit less for that. Thank you for a wonderful recipe which I will be making again!

Loving the channel! Just one piece of feedback for these portions of the video where you're showcasing something in detail, like deboning or incisions: you're cutting wayy too much! Look from 2:55 to 3:00, you manage to change angles like 10 times! Keep up the good work otherwise!

would this work in a regular oven or you really need a combi oven?

You need a combi oven for this, but you can just poach them. I'd simmer the legs for about 20 minutes, then add the breasts, bring the pot back to a boil, put the lid on and switch off the stove for about another 20 minutes. The legs are very forgiving. The key is to not let the breast meat go above 67°C.

hey! i have a combi oven but how do i set it to 71 and 61?

I normally set it to 71 and add the legs and cook them for about an hour, then lower the temperature and add the breasts. You can leave them there for up to 4 hours. Make sure you are using 100% steam though, as dry heat takes much, much longer to bring the meat to temperature.

@@w2kitchen Sorry, but his question wasnt about method, it was that he isnt able to set his oven the temperatures you have indicated and is asking how to do this. His oven may not have a low enough setting available to follow your directions.
