Try making pancakes with greek yogurt. A restaurant near me does that and they are the best pancakes I've ever had. Their executive chef told me to just replace the liquid in your pancake recipe with Greek yogurt and use the best quality vanilla extract you can find.

Same, or maybe at least Vi or Trevor. Regardless of who the tiebreaker is, there should definitely be someone to pop in to make the decision in the event of a tie. A la GMM's tiebreaker guest judges. Also, it would be a nice crossover opportunity for any of the people/characters from GMM to make cameos, think Chase or Stevie, or even more zanny think Damien or Matt & Emily as their restaurant employee alter egos (that would be fun).

5:45 - The viscosity was different partially because it looks like no one added the butter to the hand whisked bowl. I think it got lost in the blender swap. Hopefully they caught it when they were cleaning up for the next scene.

Considering they went on to say the others were flat and wet and the hand whisked wasn't, you can bet they didn't catch it. I have never seen a pancake recipe with butter added to the batter...I don't know why they did that.

I cooked at Denny's. Their pancakes are a pre mix, and you are supposed to leave clumps alone for fluffy pancakes. I could always tell when someone over mixed the mix.

I use cast iron for pancakes all the time and still get the uniform, golden color like a non-stick. It looks like you used too much butter and overheated the pan causing you to actually fry the pancake batter. Lower the heat and use a butter brush or paper towel to evenly coat the pan with a thin layer of butter. You don't want it pooling together and creating heat pockets under the batter which causes the inconsistent browning and pale spots. Those pale spots are where thick pools of butter are separating the batter from the pan, not letting it cook and brown evenly. It's cool to be quirky and have fun but it's making your experiments sloppy and inconsistent.

The uniform browning is from a thinner oil film not so much due to the cooking surface material. Pools of oil will flash fry the moisture in the batter and cause that lacey browning pattern. Spray then wipe off the excess oil before pouring the batter to get those picture perfect, uniformly browned cakes.

One thing you left out, separating your eggs and whipping the whites or adding the eggs whole. I have recipes that call for separating the eggs and folding the whites whipped into the batter. I really want to know if it's worth the extra hassle

The myths I most wanted munched were Pam vs oil vs using butter, adding vanilla to the batter or not, using only baking soda, only baking powder, or a mix of both, as well as what you mentioned with the eggs. Then using brown high fructose corn syrup makes me so mad at Josh

It is in some instances I did it with a protein pancake batter and it worked wonderfully. I did it with a pre made special mix and it didn’t do much, but that premix is the best I’ve ever had! You don’t need to do anything to it.

I use a cast iron griddle and it looks much better than what that cast iron looked like. It’s all about controlling the heat so it doesn’t burn. I like the texture of the cast iron pancakes.

It may be the higher elevation but resting really is better.Every quick bread recipe, from pancakes to banana bread is better if you let it rest for 10-20 minutes before you cook/bake. Being at sea level may effect your results, since it effects baking! Use it for quick breads at least!

A pancake myth you ignored is that you have to lube the griddle. If you have a nonstick griddle (which you guys had) you don't need to lube the griddle, and in fact when you don't lube the griddle the pancakes come out better and have a nicer color too. Also Josh put his fingers all over unrested batter pancakes that were on the griddle, it kinda ruins the experiment honestly.

How about comparing food cooked on gas versus electricity considering there is now a push to switch from gas to electric stove tops. I would love to know whether it will make any difference especially since some food experts say yes and others say no.

All that matters is a consistent temperature. From what I recall 375F is the right temperature to make pancakes, so as long as you have a consistent 385 it doesn't matter if it's with electric or gas, cuz keep in mind it's not like outside grilling where gas has less flavor than charcoal, so gas stoves don't really impart any flavor on what you're cooking.
