The whole purpose behind a heel&toe downshift is to rev match on a downshift. It doesn't do any good to hold the clutch pedal down after a rev match, then wait until the revs fall back down before lifting your left foot off the clutch pedal. I'm sure you understand rev matching, but I not sure if you are aware of your delayed lift off the clutch pedal.

Thanks for pointing that out. An elaborate question needs an elaborate answer. You're not the first one who notices that there is something "odd" going on. The engagement of the clutch is very deep so the rev matching stuff is already over when the clutch pedal is in it's last 5cm from it's fully released position and my left foot is just resting on the pedal having no influence while I'm concentrating on the braking modulation ( good example 5:30min ). My Z4 (and Z3 for that matter) are not well suited (E46/E36 much better) for the Ring because with it's long nose and short tail it's very nervous at the rear in the heavy braking zones. In those zones I delay the clutch on purpose just to straighten the rear out when it has a tendency to understeer in the negative camber turns. That way the rear brakes just a little bit better then the front. It's like you have a brake bias valve operated back and forth by your left foot really quickly. (good example 2:30min) In this case I'm close on the tail of my buddies insane Gumpert. That means very little downforce on the nose so an even bigger tendency to understeer into him (not good). This technique I've adopted myself to handle my cars at this special track suiting my driving. I've owned the Z4 for 10 years now. It has run 120.000km with 2800 laps of Ring. Still original engine/gearbox/diff with no issues or crashes while doing a typical BTG in 8 min. So my technique seems to be ok for reliability (so far). There is a lot of discussion how you should do a proper heel & toe, but I guess there are more roads that lead to Gantry.... Cheers Dr.C.

The pedal cam is a bit early. And I was wondering why the car didn't grind as you let the clutch out whilst you are in the midst of moving the gear stick

The Apollo is a monster, but it's also an extremely wide monster. At the crowded section it's very difficult for the driver (my friend) to see if there is enough space to safely overtake the slower traffic. Better be safe than sorry...
