I think the corn is like UK's "Wotsits"... I know that Frito is an American brand name, I think. N. American gets that. In the UK we call it "Doritos". Is it by P&G or Unilever? I dunno, one of those ! But it is soooo good. Used to be very into spaghettis too when I was a child. The tomato sauces is what catches you. lol. Even now, nobody makes ketchup better than Heinz... So sweet and so concentrated in tomatoes. The really really popular crisps that my cousin in HK used to be so crazy about was "McCoy's Chilli"... I don't think that you can find this now, and the tastes is different too. Used to be such a big thing when it first came out. Now it's disappeared into the ether.
Did you know that, before it became a French colony, it actually spoke chinese ? I think it could be Yue/bat wah. When some people say that, "how come they are Vietnamese cantonese"... that is because, they WERE Cantonese... 越 = 粤. Well.. a long while back.

Recently, I also found out a place that sells the 福麵 in the UK too. Which is a very rare thing nowadays. But it does taste a lot better than most noodles that I find in the local market. Hope that the manufacturers continue their business in HK. Just wanted to give them a shout, "thank you for holding on" ! Childhood things that I remember in HK is also things like... the cream crackers with milk, and then cooked hot. Recently came across a YT video from Korea, that is similar. So surprised that people still do this as well. Of course, pocket eggs with soy sauce. Childhood staples. But really not so common a thing in the UK. Bread is also super different in the UK compared to HK. I realised when my mother stated that she had diabetes, why it was so. Many items in the UK do not have sugar in them. But even soya milk has sugar... So this is a very big difference in nutrition in general.

I really miss "lo shui" dishes. I tried to make this once in the UK... and it is SO expensive ! 🤪.... I miss my mother so much. And then I tried to make the soy sauce chicken. The soy sauces were so expensive. I also like pig's trotters.. but in truth... pig's trotters is really quite. In the UK, you have to know a good butchers, and the butchers have to know a good farmer. (Not all farmers follow regulation as well, but the ones that do, you can trust their products.) So it is very rare. We know that soy sauces is based on fermentation, so yeh... this has to be quite well controlled. But you have the really big fire pot to kill off those kind of bacterias that is fermented. But I do feel that, you can re-engineer the process, which is to filter out the fat, but to let the collagen left. Which as TCM... it follows the idea that, you help the bones to heal, isn't it? Collagen has been more or less banned in the UK's food stuff. Booo..... Once a while, I make my own collagen TCM soups. Ooo... yeh... 🤭 Ms Goo, write down some of your dad's recipes! Everybody has a family recipe. Aiyah... cook it for your daddy, once a while lah. I tried to follow my mother's "taro meat claypot". I'm not good at making this, but everybody that went to uni, had this as the weekend package. :) My brother had it, when he went to uni. Then I had the same when I went to uni. My nephew now has my brother making it for him when he left for uni. So yeh... you need to know at least ONE dish.... My sister has a recipe from her mother in law as well. The beef roast.
It's never tartar sauce. That's more British. It's usually mayonnaise.. cos that's more French. So if Canada had a lot more Catholics as well from Europe... then it is most likely to be mayo. Cos I think there's like a classic recipe... that is French. Like.. Djion mustard? Eggs and vinegar is a big thing over in the continents. Somehow in the UK, we are not too big in that combination. Usually, the British influences are mostly from America. In the UK, we have a lot of egg pies...

@@yipchuncheong204 : Many could have been Cantonese, that went over into Vietnam, and then tried to stay in HK, but they were moved to other British commonwealth countries, that could be why as well. Britain didn't know what was the history you know. Not fully. Definitely not the history around 1700s....

I think it's real quails. I never knew that HK had this. I've seen the frogs'. But I remember my grandfather was able to buy things like quail's siu mai in HK when I was a child back in the 80s..... So it could be real.

@@MeiinUK Yes, you could find live quails from the markets in the old times. But 禾花雀 was sold from the bbq booth & that's the one they talked about. 禾花雀 is a really tiny bird that is protected as being endangered species.

@@CK-W : If you really think back... those were the days whereby the fields existed.. and the farms existed as well ? It was not an actual "endangered specie" at all back then. Somebody just recently posted online... that.... they incubated an actual ecosystem.. and those birds came back.... If anything, there should be a proper controlled.... 禾花雀 farm to exist in HK... and to give those back into those specific wild life areas instead ?... And to lock it down... I remember my grandfather with his birds... and he looked after them quite well.. and they had this in the local dim sum places as well... and people did indeed treated them so well too... In a way, to stop them also from being attacked by other wild lives... as well as actually preserving them too.... I really miss the 1980s' HK... everything about it, was just about the right balance.. now, everything is too much....
