✍🏻𝗜𝗡𝗚𝗥𝗘𝗗𝗜𝗘𝗡𝗧𝗦:
𝐅𝐨𝐫 𝟏𝐬𝐭 𝐑𝐞𝐜𝐢𝐩𝐞:
* Vermicelli(सेवई) - 2 Cup/250 Grams
* Ghee(घी) - 3 - 4 Tbsp
* Milk Full Cream(दूध) - 1 Cup
* Sugar(चीनी) - 1/2 Cup
* Cardamom Powder(इलायची पाउडर) - 1 Tsp
* Fresh Malai(ताजा मलाई) - 3-4 Tbsp
* Dry Fruits(सूखे मेवे) - For Garnishing
𝐅𝐨𝐫 𝟐𝐧𝐝 𝐑𝐞𝐜𝐢𝐩𝐞:
* Vermicelli(सेवई) - 1+1/4 Bowl
* Ghee(घी) - 1 Tsp
* Milk(दूध) - 1 Litre
* Green Cardamom(हरी इलायची) - 4-5
* Baking Soda(मीठा सोडा) - 1 Pinch
* Sugar(चीनी) - 1/2 Cup
* Almonds(बादाम) -Some
* Pistachio(पिस्ता) -Some
* Almondette Seeds/Chironji/Charoli(चिरौंजी/चारोली) - Some
𝐅𝐨𝐫 𝟑𝐫𝐝 𝐑𝐞𝐜𝐢𝐩𝐞:
* Full Cream Milk(फुल क्रीम दूध) - 1 Litre
* Sugar(चीनी) - 1/2 Cup
* Vermicelli/Semai(सेंवई) - 4 Cup/150 Grams
* Ghee(घी) - 2 Tbsp
* Sugar Powder(चीनी पाउडर) - 4 to 5 Tbsp
* Fresh Malai(ताजा मलाई) - 4 Tbsp
* Cardamom Powder(इलायची) - 3 -4
* Thick Milk(फुल क्रीम दूध) - 1 Cup
* Cornflour/Arrowroot(कॉर्नफ्लोर/अरारोट) - 3 to 4 Tsp
* Almonds(बादाम)
* Pistachios(पिस्ता)
* Cashew Nuts(काजू)
✍🏻𝐑𝐄𝐂𝐈𝐏𝐄:
𝐅𝐨𝐫 𝟏𝐬𝐭 𝐑𝐞𝐜𝐢𝐩𝐞:
For Sevai, keep the pan on the flame & put Ghee & Vermicelli/Sevai in it. Then roast the Vermicelli/Sevai till it turns dark brown on a slow flame for 7 to 8 minutes. Keep the other pan on the flame, put Milk & Sugar in it & let it be boiled. When the Sugar gets dissolved properly, then add roasted Vermicelli/Sevai & cook it on a slow flame. Then put Cardamom Powder, stir continuously & cook on a slow flame till it gets dry & soft. At last, add some Fresh Malai & cook till becomes thick. Then take it out on a plate & give it any shape by using a cookie cutter or glass/bowl. Garnish with finely chopped Dry Fruits & enjoy the dessert.
𝐅𝐨𝐫 𝟐𝐧𝐝 𝐑𝐞𝐜𝐢𝐩𝐞:
Keep the pan on the flame, put Ghee & Vermicelli/Sevai in it. Then roast the Vermicelli/Sevai till it turns dark brown on a slow flame for 8-9 minutes. Then put Milk and keep it for boiling. Take some Green Cardamom and grind it coarsely in a mortar pestle. When the milk starts boiling then put the Cardamom in the kheer, a pinch of Baking Soda, some Sugar. When the sugar gets dissolved properly, then put nicely chopped Dry Fruits like- Almonds, Pistachio & Amonette Seeds/Chironji/Charoli in it. Cover it and cook it on a low to medium flame for 2-4 minutes. Keep it for a cool down, serve it & enjoy it.
𝐅𝐨𝐫 𝟑𝐫𝐝 𝐑𝐞𝐜𝐢𝐩𝐞:
For Cornflour Milk, Take some Milk, add Corn Flour or Custard Powder & mix it well & make it lumps-free.
For Thick Milk, keep a vessel on the flame, put Milk, some Sugar & boil it. When it starts boiling put Cornflour Milk Mixture in it. Keep stirring on a low flame until the mixture turns creamy thick. Then keep it to cool completely.
For Sevai, take some Semai & slightly crush them. Then keep the pan on the flame, put some Ghee & crushed Vermicelli/Sevai in it. Then roast the Vermicelli/Sevai on a slow flame for 5 to 7 minutes till turns crunchy. Then put some Sugar Powder, Fresh Malai & some Cardamom Powder in it. Mix well making sure everything is well combined & keep aside.
For Serving, firstly, in the serving bowl transfer half the amount of roasted Vermicelli/Semiya. Then pour in prepared thick Milk by sieving it. Cover it with clean wrap & keep it in the freezer for some time to half set. Put some Semiya on top. Garnish with finely chopped Dry Fruits like Almonds, Pistachios & Cashews Nuts. Cover and refrigerate for 4 hours or until the Pudding sets completely.
Finally, cut the Shahi Semiya Pudding/Sewai Kheer into pieces and enjoy. In this way, homemade Semiyag Pudding will get ready easily.
