He has specifically said that if he has an idea, he maybe writes "I eat a lot of sugar" on a piece of paper somewhere, and that's the last time he ever looks at it. After that he's talking it out on stage.

I went to Nate's show in Reno back in July of 2021. Anyone that has followed Nate for a while knows that his dad is a magician/comedian and at the Reno show, his dad opened for him and was brilliant and hilarious. However, the most moving thing was how he closed his act and that was by saying, to a packed house by the way, "Thank you all for loving my son." It was so beautiful and moving and I just about get choked up thinking about it. Of course the crowd went nuts too. It was a great show and Nate was just as funny as always. It's great to see him doing so well.
