Ginger is the only tricky ingredient of this recipe you can use less ginger if it’s too strong, or skip it. Good luck 👍🏼

VERY informative video! Information I've been seeking but couldn't find because other videos always wound up using large amounts of factory processed MSG, whether knowingly or otherwise. I have no problem with store bought MSG containing products used correctly in reasonable amounts. I have many in my pantry. But I do have a definite problem with "stacked" MSG applied to food because it is a main ingredient in so many seasonings, powders, pastes, sauces, and condiments used in Asian restaurants and sold in international sections of grocery stores. I often feel sick after eating at certain chinese restaurants in my area. Oh, the food tastes good... until I'm almost finished. Then I start feeling bloated and develop a headache. My face and hands begin feeling swollen and I feel puffiness around my eyes. I feel thirsty for cold ice water but find it difficult to drink it. This is very uncomfortable. But I love Asian cooking so much that I've been learning for years now trying to prepare the dishes I love most, at home, in my kitchen. In your video, you demonstrate clearly and concisely how to bring together fresh ingredients naturally rich in inosinates and guanylates together with aromatics that I can use in my Asian cooking with other ingredients that provide the third key to maximize umami, glutamate. These occur, as I'm sure you know, naturally, in meats, fish, soy sauce, and other ingredients. Whats more, I can get all the ingredients in your video locally. Very well presented! Great job! Thank you so much!

Your comment made me smile because I felt exactly the same way. After reading your detailed and thoughtful comment, I also feel compelled to give a detailed response. I am not someone who insists on using only organic or natural ingredients. I sometimes use MSG in my cooking without any issues. However, I sometimes feel extremely tired or bloated and need to drink a lot of water after eating out. This is not only the case with Asian restaurants, but sometimes with pizza or other types of food. As someone interested in cooking, I started to think about the various factors that contribute to flavor. While I am not a nutritionist or food scientist, I learned that different flavors can affect each other. For example, when food is spicier, more salt or sugar may be added. When I eat at a restaurant and don't feel that the food is too salty, but feel the need to drink a lot of water, it's evidence that I actually consumed a lot of salt. When I add a small amount of MSG at home, it's less than a pinch, but some restaurants pour in large amounts of seasoning. Right? If you add a lot of MSG, you must add other seasonings in the same proportion. I'm glad that my video was helpful. Of course, I used ingredients that are optimized for Korean cuisine, but you can apply them in a way that is optimized for you, subtracting or adding some of them. There are other dried fish or dried tomatoes that can be used instead of anchovies and various other options. Additionally, my recipe doesn't have to be used only for Asian cuisine. Some people add my seasoning to toast, and others sprinkle it on all kinds of food and say it's really good. I hope you find the best combination that suits you. @@SoraJoanna Thank you for the nice reply. And I agree. Asian restaurants are most certainly not the only ones where I've left feeling some degree of discomfort. I, too, have had similar experiences from most every type of restaurant. I would say that the diet most Americans consume these days is jam packed with ingredients like MSG and/or other ingredients, such as yeast extract, that produce similar results and are highly processed and cheaper to make. And that applies to restaurant food, grocery products, and some of the currently popular prepped mail order meal kits. I'm neither vegetarian nor vegan, and I'm certainly no dietician or food scientist. I've had no formal culinary training. But I have taken a deep interest in feeding myself and my family with good, nutritious, and delicious dishes they've come to love and ask for. I get great satisfaction in knowing that on Sundays, when my whole family gathers in my house after church for Sunday dinner, they're getting a rest from their work week and are being fed good food in a peaceful and joyful, family experience. And they all, even my grandchildren, clearly see and taste the pure love I give them through my efforts to find the best fresh ingredients and prepare them in the best ways I can find. It's evident in their thankfulness. I always make more than enough because they all want to take some home afterwards. I get even more satisfaction in seeing my grown children striving to learn and prepare meals for their families at home in the same way. Seeing food traditions being passed along is very gratifying. And I should attest here that, in my experience, the best recipes most often are those handed down from years past. I'm very interested in Korean cooking as well as all the different styles and influences from that part of the world. I definitely will check out the video you mentioned and any other you may have posted. Thanks again!

In Indonesia, there are shrimp & fish extract (paste form) called "petis", similiar to oyster sauce.. All water evaporated.. Maybe those can be used to make "Water-soluble natural MSG"..

No this one is my own. Dasida is the product name. It is korean beef seasoning I don’t think you can make Dasida at home. But dasi is broth in korean language, are you talking about dasi?

That’s the sea kelp called Dashima in Korean also konbu in Japanese. It is the one of the strongest umami flavor enhancer in natural. Korean use it for soup stock. Try and you will fall in love with it 😍

Bought very cheap one around US$70 from Lazada. Morphy Richards it says everything else all Chinese which I can’t understand lol looks compact and nice but I’m not sure it’s good product or not

You never used flavour enhancer? You can add this to any foods. Maybe you can use it small amount like black pepper. It makes foods tastier. Don't use too much, consider it as black pepper, too much black pepper will ruin the food.

I don't really understand what you mean by 'salt drying,' but I think you might be referring to the fact that certain food ingredients from the sea, when dried, retain salt naturally since they are already soaked in seawater.

In Indonesia, many sea product we add many salt when drying it, not just from seawater. So, it's very very very salty. We called it "ikan asin" (salty fish)..

Long lasting tip is to make it dry. If you’re dry climate you can keep it shady cabinet. In case you’re in humid climate you can keep it refrigerated and frozen like me. How long you can keep it depends on how dry you can keep it.

If all ingredients are completely dried, they can be stored in the refrigerator for over 6 months. However, storing them in the refrigerator may cause the powder to absorb the smell of the fridge. In some cases, it may be better to store them in the freezer.
