Not all vegetables take from spring from fall to mature. If you’re getting a late start on your home garden or live in a region with a short growing season, fear not. There are many healthy, delicious vegetables that are quick to harvest. Here are the 9 fastest growing vegetables to get your garden jumpstarted.
1.Garden Cress - 14 Days
Ready to harvest in as little as 2-weeks, garden cress can be planted in early spring as soon as the soil can be worked. Also a garden space-saver, a small (1 or 2 feet square) patch of cress will supply you with an abundance of this tangy herb.
2.Radishes - 21 Days
A cool season crop, spring radishes grow best in 50⁰F to 65⁰F weather. Once sown, you’ll see leafy green shoots above the soil in just three or four days. Keep planting seeds every week or two for a constant harvest through spring and autumn.
3.Green-Onions - 21 Days
Also called scallions, green-onions are quick-growing plants that can be cut back to their base again and again throughout the season. Once their green shoots reach a height of 6-inches, they are ready for the first round of harvesting.
4.Tatsoi - 25 Days
A low-growing mustard green, tatsoi is a wonderful addition to salads and soups. Baby tatsoi leaves can be harvested when they reach 4-inches in length, or you can wait the full 40-days for tatsoi to mature to full size.
5.Lettuce - 30 Days
Another cool-weather vegetable that prefers temperatures between 60⁰F and 70⁰F, lettuce seeds should be sown in early spring and late-summer. Of the five types of lettuce - loose-leaf, cos, crisphead, butterhead, and stem. leaf lettuce varieties like green leaf and red leaf are among the easiest to cultivate and are more tolerant of hot weather. Planting new seeds every 14-days will provide a continuous harvest.
6.Spinach - 30 Days
Able to survive in temperatures as low as 15⁰F, spinach is a cold hardy-vegetable that can be planted as soon as the ground-thaws. Pluck outer spinach leaves from the plant as it grows or re-sow seeds every 2-weeks for successive harvests. Don’t wait too long to gather spinach because its leaves will become bitter once the plant reaches maturity.
7.Arugula - 30 Days
Since arugula seeds germinate well in cooler-soil, they can be planted as soon as the garden bed can be worked after the spring thaw. Sow seeds every two to three weeks for continuous-harvesting.
8.Kale - 30 Days
A “cut-and-come-again” plant, kale’s young and tender leaves can be culled continually throughout the growing-season once the plant is about 2-inches tall. Avoid picking the central bud, since this keeps kale growing and productive.
And 9. Swiss-Chard - 45 Days
A member of the beet family, Swiss-chard can be harvested throughout the season by cutting-off the outer leaves when they are about 3-inches long and are still young and tender. In addition to using the fresh-leaves in salads, you can cut Swiss-chard stems from the leaf and cook them like you would asparagus.

Spinach and Snow peas also quick growers. You can get a nice bowl of fresh snow peas every second or third day from around 6 healthy plants once matured.

although overall the list is what would be called "salad greens" there are some with more than just use in salads. 1. Garden Cress - used raw as a salad, used cooked in a soup 2.Radishes - eat this raw, cooked or pickled 3.Green-Onions - this makes a great topping on foods for a good onion flavour but can be used pretty much the same as brown onions 4.Tatsoi - you got me, but it's green Id say raw salad or in soup 5.Lettuce - this is a poor one, historically eaten cooked its now used raw as a salad, its like 99.99999% water 6.Spinach - Palak Paneer no better way to eat spinach 7.Arugula - I have only ever seen this as a salad green 8.Kale - raw, cooked or pickled this green is very versitile, same family as mustard greens.

Arugula can be used as pizza topping, in pastas, I use it in grilled cheese sandwiches...they are good...but try not cooking arugula a lot...they are tender...

I know for kale, lettuce, radish, onion, i might be missing a couple that I have planted from her list, i have grown in zone 2b. And the kale even hit a few frost days. Kale is super hardy and freezes well if you have a large crop. Good in soup, shakes and in salads kale comes from Russia i I believe so it's a "cold" weather veg. I hope I understood your question properly.

Garden cress is a tiny plant. It is much better to grow mustard microgreens, if you want quick results. The seeds are a lot cheaper too. Grow icicle radish instead. It is also much more heat tolerant and less easy to bolt. It is faster and you get bigger radishes. Pigweeds are very fast and can tolerant heat, drought, rain, and a little bit of cold. Head lettuces are less heat tolerant than leaf lettuces. Grow black seeded Simpson's instead. Garland daisy is the best. You can harvest it throughout the growing season and is drought and heat tolerant.

DE = Diatomaceous Earth. Make sure to get the food grade, works great for any crawling or snail. Works like small shards of glass for them. The won't cross your DE line.

I think it depends on what point you're harvesting. Lettuce for example, you'll get some leaves big enough to eat within 30 days. No way will you get a whole lettuce head in that time, but a few leaves :))

​@@rosyclaire yes true :) Try planting 40 in hydroponics in a regular polystyrene vegetable packing box & there's more lettuce than you can eat coming off them just in leaves! (as I discovered a couple of months ago). Still deceptive on growing times though imo, but yes, is certainly viable to get as much as you can eat in that time if you plant enough seeds to start with & good tip for people with crops like lettuce, space them close together & then harvest every second lettuce when they become too crowded

We live in south-central Idaho and it's hard to distinguish seasons here. We start planting green onions, several different kinds of greens, ie, Spinach, Radish greens, etc. My wife is from the Republic of Korea (South Korea) and we eat tons of greens, lettuce, bok choy, Napa Cabbbage, garlic,. She some form of Kimchi using Greens, Cucumbers, Radish (both the greens and fruit). We can start planting as soon as the last frost and if these types of vegetables have already started and you get a late frost you can throw a sheet or blankets over the started veggies. Our Springs and Falls are really long but we can count on 105+ temps in July and August. The greens don't do well in really hot weather 90f+ but we still have greens growing now after Thanksgiving.

Radishes weren't designed to bear fruit. Only fruit bearing crops do that.

Left long enough, radishes grow a juicy seed head containing (no surprise) the radish seeds. There is a variety 'bier munchen' I think it's called, that is grown specially for these pods which are eaten as a snack.

Tatsui is closely related to bok choy. Like lemons and limes, or broccoli and cauliflower.

@white man invented everything u use facts It's just as easy to grow as tomatoes, similar plant. You can add all kinds of steps to maximize your production but even without you'd be able to grow easily lol.
