Pistachio Qatayef Rolls
Ingredients
For Qatayef Rolls
• Powdered sugar 1/2 cup
• Butter 60 grams, at room temperature
• Vanilla essence 1 tsp
• Egg 1, at room temperature
• Baking powder 1 tsp
• Semolina (suji) 1.5 tbsp
• Plain flour 1 cup
For Syrup
• Water 1.5 cups
• Sugar 1.5 cups
• Lemon juice 1 tsp
Filling
• Pistachios 1/2 cup, crushed coarsely
Topping
• Vermicelli 1/2 packet (75 gram), I used Mehran sewayyan, finely crushed
• Pistachio crushed 1-2 tbsp
Preparation
1. Preheat the oven at 170˚C using upper and lower rods.
2. In a pot, add water, sugar and lemon juice. Bring to boil on a medium flame.
3. Turn the flame very low and boil for 10-12 minutes until the sugar syrup is little bit sticky. You can watch the video to see when your syrup is ready. Turn the flame off when done.
4. While the sugar syrups is boiling, you can start the dough for the qatayef.
5. In a bowl, mix icing sugar and butter until smooth. Add egg and vanilla and whish until creamy and well combined.
6. Add baking powder, plain flour and semolina. Mix until dough is formed.
7. If the dough looks hard, add 1-2 tsp water and mix again.
8. Add chopped pistachios to the dough and mix until just combined. Do not overmix.
9. Divide the dough into 8 pieces and shape into 8 rolls.
10. Coat the rolls in finely crushed vermicelli and place in an 8x8 inch pan.
11. Bake in the preheated oven at 170˚C using upper and lower rods for 10-12 minutes or until golden brown.
12. Take the qatayef rolls out and immediately pour the luke warm sugar syrup on hot qatayef.
13. Allow to come to room temperature then cover and refrigerate overnight.
14. Next day, you can pour any leftover sugar syrup on top, if you like, otherwise just sprinkle some pistachio and serve with tea or coffee.
15. Qatayef can be served chilled or at room temperature.
