Hi! I'm from Kolkata ,have been following your channel for quite a long time.Your ways of dealing the recipes are really great.Since you utilized Panch foron let me give you the general but the authentic panch foron.This mix ratio of the whole spices except Radhuni( in Hindi I guess its called ajmod/ajmed )remains equal, so the order goes like this: 2gms of cumeen seeds 2gms of nigela seeds(kala jeera/kalonji) 2gms of fenugreek seeds 2 gms of fennel seeds, 1 & half gms of wild celery seeds(ajmed/ajmod). Light Roasting this whole spice mix,you'll get an awesome flavored masala we call Bhaja Moshla for veg curries ,dry sabzis, fried sabzis etc. even in some recipes of Fish curries but I swear the sprinkle of this roasted masala creates an excellent flavour to the dishes.
