+Waqar Detho Sure -- in fact the 1-NN (kNN with k=1) regression example at around 2:10 has a one-dimensional feature x. If k > 1 it will still be piecewise constant, but have different change points; e.g., k=2 we would change values midway between the 1st and 3rd data points, etc.
