It's for the edgy factor. The character isn't gonna be swearing all the time and saying obnoxious stuff if they're likable, and since that's the whole basis of their 'comedy' they have to be arseholes. It's always ultimately a mistake, because nothing is more boring than a one-note character no matter what that note is. It's why Rick occasionally shows genuine affection for his family, and Morty occasionally loses his temper; if Rick was always mean, and Morty was always unconfident then some of the best jokes in the show would be lost.

Big Bang Theory also has the advantage of "Sheldon's knock" being a character trait in addition to a running gag; it makes sense that he'd knock in exactly the same way every time, because it's the kind of robotic/autistic behavior he exhibits elsewhere. And as an extra bonus, *people knock on doors IRL.* It can be a running gag *without* needing to be varied or parodied all the time, because sometimes Sheldon just needs to knock on a door to move the "plot" along. They don't stop the show to have Sheldon knock on a door for no other reason than to do the "Sheldon knock". Instead the "sheldon knock" will be a 'background gag' to whatever other shenanigans are going on.

If you wanted to play the "Little Man Tate" for a less awful joke, you'd want to go with something more culturally relevant, like, say "Fight Club" where hoops guy seems to venerate Tyler Durden, satirizing people who don't get the film's not wanting you to be like Tyler. You keep the joke up after this point mostly in visual gags until something happens that is relevant to the split personality reveal of Fight Club, before using now to reveal he's never finished it by another character referencing the film and him not getting the relevance.

Just to add onto the mention of Archer using catch phrases well, one specific thing they do well is have a catch phrase that is unique to a particular episode. And rather than it being one character repeating it, it's instead a phrase that gets repeated several times (in different contexts). The most memorable one to me is "Do you want ants? Because this is how you get ants." one, and the different scenes/contexts all being reasonably relevant ones for a character to say that help sell it (and create this amusing idea of people being very concerned about ants in their day to day).

I think I've devised a simple test to decide if an adult animated series is good or not. Just ask yourself "would I watch it in live-action?" Bob's Burgers is basically just a family sitcom, Rick and Morty is a deconstructive sci-fi series, Archer is a parody of spy fiction, but this is just "generic adult animation". It's defined entirely by its format, and once you take that away, there's nothing left.

Archer is a great example of an adult animated show that is aware of how exaggerated it is but what works for it is that it can pull of the comedy while still accomplishing the tropes of a pulp spy/action series, right down to the art style. Hoops....is just another show that at this point isn't riding off Family Guy but is trying to ride off the more 'edgier' Rick and Morty. I KNOW there are better animated shows on Netflix but holy fuck, they're not really fighting off that stigma of Netflix just being cable schlock 2.0 when shit like this gets more advertisement and chances to run longer than better shows. And I'm not turning my nose up on this type of humor but there is only so much of the same shit I can take.
