Thankfully later the episode explains they switched her eggs from being served Wednesday to Friday because they were so popular, which seemed to make her even more happy to know that she is producing very high quality eggs :)

While this clip ends on a tragicomic note with Legom fainting at the news from Legoshi, the sequence in the manga ends on a more heartwarming note when we find out later that her eggs were switched to another day, in which Legoshi buys his egg sandwiches then, and continues to enjoy them, much to Legom's relief and happiness that he appreciates her work, even though he doesn't know she provides them. While she expresses her feelings of providing eggs to satisfy her own sense of pride as a hen, I like to think that she's still very grateful to Legoshi for him valuing her eggs at such high quality. If they would take the time to get to socialise, they would be very good friends.

I seems that the anime did not include this sentence, but in the manga, Legom actually admits, to herself and the readers, that Legoshi is her no. 1 customer. That's why when Legoshi stops eating egg sandwiches on Wednesday, she's THAT shocked.

When I first saw this episode, I was so desperate to try it. Then my mom made me an egg sandwich for breakfast one morning and it was delicious. So I’ve been making them myself (fluffy moist eggs with a little bit of cream cheese and mayo on soft white bread) guys. YALL. it’s now my comfort food and I eat it while watching this video every single time. I absolutely recommend

This...is what made me finally start trying to make Egg Sandos. Probably never going to reach the point of a kombini (nor would I have the opportunity to have a chance to compare), but it's one of my favorite things to make in a pinch. (The best substititue I have for the fluffy bread is Artisano brand bread)
