This video shares what I think is the easiest way to increase self-sufficiency from your vegetable garden. Salads are simple, celebrate the seasons, and are tasty! There are an infinite number of ways to make a salad, and I share the winning formula that will mean any salad you make will be delicious and nutritious. The best thing for me about this is that you can use small quantities of crops and it is zero waste, the only thing left may be some roots or leaves but they can go right back onto the compost or as chop and drop to help build soil health. ~Couldn't agree more with you about salads Huw. So many people get hold of an iceberg a few tomatoes and some cucumber and they have no idea of what they are missing when it comes to growing your own. Great video mate

It's so easy so long as you plant enough and lots of variety including beet leaves and loads of 'over winter' stalples that can be flash cooked and included like purple sprouting broccoli, chard and kale. lol 💖🙏🌻

Watching this video for fist time after making a salad for dinner last night of beetroot, lettuce & handful of parsley from my garden with fetta, olive oil & balsamic vinegar. Missed the opportunity to add nasturtium & borage flowers, and a few mint leaves & chives from the garden. Thanks for reminding me to forage first! A couple of tiny zucchinis would have been good also.

For northern US growers, I'd definitely recommend One Yard Revolution for inspiration for winter salad growing. Just a few low tunnels, and you really can be eating salads all winter. And of course, you must read Eliot Coleman's book Four-Season Harvest. Your tunnels don't have to be pretty or perfect, just some greenhouse plastic over hoops, weighted down with rocks.

Rik, thank you for sharing this information. I covered a salad bed a few years ago with such a simple method as this and it is now five years later. Still growing salads straight through the winter. I love winter gardening.

Your salads look delicious! I love that my garden gives me something everyday. I actually do have lettuce all year - I make sure I always have some mature lettuce. When they start looking like they are bolting or just suffering, I make sure I have some baby lettuces already started. If it is too hot, i grow them in a shady or cool location. So I always do have lettuce for when we want a few leaves for our sandwiches or to graze. I also make sure I have radishes, beets, chards, etc, in the garden for when we are looking for a vegetable dish. Even if it is just a few brassica leaves or a beet with beet greens or a radish for garnish. Once the garden is growing, there is always something to eat. Love gardens. I especially love just grazing through them - a leaf here, a flower here. Homegrown greens have so much flavor that I don't need that much to feel as if I have had a meal.

Lovely video! Thank you for the inspiration. Nuts or seeds will make a wonderful addition if you have them. Pumpkin (or other winter squash), sunflower, tree nuts…. And preserved dried fruits such as dried tomatoes or blueberries. Grated citrus rinds adds great flavor to dressings. Oh, can’t forget some of whatever pickled items you may have prepared, especially peppers.

One of my goals is to achieve salad self sufficiency. Here in MI in the states I have to figure how to be able to do this year round in a smaller house, but I 100% agree with the variety of options when it comes to salad. Cheers!

Nice video Huw. I think square foot gardening lends itself very well for growing salad crops. Especially for those people who don't want their back gardens looking like an allotment but may still want to grow some food themselves. Maybe a 2 foot deep raised bed or planter running the length of the garden at the fence can grow alot of salad crops and still have their garden for entertaining. Salad crops grow quickly and could fit in this model very well.

@@HuwRichards 😂 I think they are one of those serious medicinal plants that need to be taken in moderation generally speaking. I'd say after a spring of nothing but one wouldn't have any toxins or worms 😉

@@HuwRichards if you harvest tender leaves they are mildly bitter, also it's a lot more nutritious than any lettuce... and whether you believe it or not, heirloom crops given by Nature are better for health, rather than a crop that has been selected or hybridized in the last centuries, it loses some qualities as for nutrition...but of course if you don't like a food item, then don't eat it or grow it

Do you have any suggestions for growing salad makings in extreme heat? I can do this in winter and spring in California but all my greens are bolting now that we are hitting 90+ degrees, andnigs just April. I need something that will feed me through the 105+ degree summers!

So many lovely ideas Huw. I have lots of different types of green leaves and herbs in April and also a small variety of aliums....all sorts gets chucked into a salad and a smoothie. I aim to be self sufficient in salad this year by growing lettuce in the house under grow lights...fun!@!

Wonderfull inspirations here! And this is how we do it, too....My way of cooking has totally changed since we have our bigger garden. When i had 3, maybe 4 vegetables in one meal it´s now 7,8 ...15...And this idea "Look, what´s ready in the garden" is perfect for cooking in a Wok also! I´m quite happy if i have some potatoes or rice and eggs ...and SALAD!

Here in the Midwest USA we are able to do 3 crops of lettuce based salad - spring, fall, and winter under the tunnel. For summer around June comes the cabbage, we make salad with that, carrot, beets, peas, broccoli, cauliflower, green onions, etc that come on then. Also this year I'm going to try 'Gokoboko' spinach that comes from Ghana and is being sold by Baker Creek. Not a true spinach but looks like it and grows in summer. Also grow summer greens, magentaspreen and golden purslane. Hopefully all that can make for some really nice summer salads.

Found out that spinach will survive winter in USDA zone 6b. Survived several nights in single digits Fahrenheit and even more in the teens and low twenties. Lost rutabagas, and raddichio, but the Bloomsdale Long Standing not only survived, but has been picked every week since the last week of February. Still thriving. Next fall I’m planting more varieties of greens that will survive the cold of winter.

The true taste of the season, healthy and full of nutrients. Maybe not the love at first bite and a kind of unfamiliar... I read several years ago a book, written by Masanobu Fukuoka, that impressed me so much, how he described his path to permaculture and so on...

Grow sprouts indoors! I ate heaps of sprouts during 2020 including funegreek & puy (French) lentils out of the pantry cupboard. Couldn't get seeds for the garden but was lucky to have heaps of purple sprouting broccoli!

I love that I can grow salad greens in the cold frame all winter, and I can pull back the straw to harvest some Japanese Winter Carrots and Parsnips to add to the salads.

We were just talking about how to store all the wild garlic here in the Tipperary Mtns yesterday. Pesto is the obvious choice but always tastes a bit strange after a few months, perhaps it needs to be dried first. Of course it's probably not healthy to eat to much as it's also medicinal but any ideas would be welcome ... looking forward to the book. lol 💖🙏🌻 My mothers recipe for a french vinigrette is simple; Virgin Olive oil 1ltr Cider or wine vinegar 1/3-1/2 ltr Garlic 3-5 colves crushed Dijon/English mustard 2 teaspoons or to taste salt & pepper to taste 1/4 - 1/2 teaspoon of sugar ... shake well 😃

I grow things for salad. The rabbits come and eat my lettuce and other greens and get fat, then I trap the rabbits and make stir fry or rabbit bacon salad. You can’t build muscle on greens alone.

Claytonia or miners lettuce. It's very mild just like lettuce, but it doesn't go bitter in summer. It's one of my favourites. It's also both perennial and self sowing in my zone six garden.

@@tinnerste2507 I was asking because of the resemblance to what I grow as "miner's lettuce" - not as pretty or as round as the one in the video (must be different variants), but it looked like it could taste just as nice. It's one of my favourites too and North of Sydney it grows over winter. Thanks for your answer and Happy Gardening.

Hi Huw, I was having this discussion about salads in winter with my mother as she stated that you can't grow lettuce in winter, I explained to her what you've discussed in this video. This "self-sufficent" thing has been blown out of propotion; it can't be achieved with a plot of land. It's simply wishful thinking.
