I've enjoyed this drink for years. By far my favorite. I had blackberries on hand this evening. Following the same recipe, it was delicious.

i live in Amarillo TX and the most popular cocktail in the Amarillo / Lubbock area is a “Chilton” - invented in sometime in the last decade in Lubbock. named after Dr Chilton, its a Tom Collins with no simple syrup, just vodka, citrus, and soda water. Weatern Son flavored vodka is preferred. Craft variations use high end vodka with muddled fruit.

i'm hoping to do the same right now. i'm attempting to build a better beverage program as well as a beer program at the bar i'm at now. the beer program is going great. next step is the cocktails but i'd like to be in a classier place making classic drinks and having all of the knowledge.

Ginger Collins! 1 1/2 oz Domaine de Canton Ginger Liqueur 1 oz Simple syrup 3/4 oz Lemon Juice(Fresh!) Place in shaker with Ice, shake, strain and pour into Collins Glass filled with ice, top with Ginger Ale, garnish with a lemon, cherry and /or a piece of sushi ginger! Recipe by: Lawrence Spies

I'm so happy to finally be working in a place just like this.. I worked in a douche bag bar for several years and it was busy and good money but the customers were retards now I'm serving sophisticated drinkers and finally getting to make classic cocktails. ITS AWESOME!

Most bars don't add the simple syrup. I hate those fucking bars.
