Hi Tiffani, with the cake sizes, you can trim the sides to make them even.and for the drip, you need to use a ratio of 1:2 (cream to chocolate) that way the drip doesn't run all the way down. Also, while using the scale cutter, wiggle it like twice and when you lift it'll be easier to get the scales one by one. I'm a baker and just helping a little. Anyway, I'm so happy for you and the progress you have made in your cake decoration journey. So good to see the effort you put on your kiddos birthdays. ❤️❤️

HIGHLY recommend using gel food coloring to color frostings and buttercream. The color is so concentrated that you can use less and if you use the liquid food color, it will sometimes effect the consistency of your frosting. The added moisture from the food color will make the frosting way more runny. Gel color comes in so many different colors and shades, eliminating the need for color mixing. Buttercream can stay at room temperature for up to two days before needing refrigeration.
