The information about the first knife is still found in the game. If you go to the moon, and do the post-shadowkeep campaign stuff, you get given lore books from the witness about their understanding of the beginning of the Universe (the Unveiling book). The term "The First Knife" comes from these books, as well as "The Gardener" and "The Winnower". Note the witness in the raid clarifies he is not the Winnower, just the first knife (in his opinion). As for the final comment of the witness, its believed that the light is undoing the work of the Veil, splitting the Billions of combined minds into individual ones, so when he says "I don't understand", its because all the other personalities have been purged, leaving only the one final mind as he falls apart.

Ah, neat. I really appreciate this comment and all of the additional context you've provided. I definitely plan on going through the lore at some point. Still have to get through Byf's 10 hours video.
