it would be 2000000x over power for a pfsense box. Id go with the i3 version and 16gb ram though.

Try OPN-sense + Suricata installation from start to finish, I think many people want to follow that!

This might be an option for me in the near future. I'm in the process of switching my internet provider from 1gb cable to 2gb bidirectional fiber. With the SFP ports, i can use this as my DMZ between my house and the rest of the world without sacrificing any speed.

Yup. Id get the i3 version tho. A i5 or i7 would be over kill.
