Watching others cook ribs on a Santa Maria (and Smoking Joe grill ribs hot and fast in an hour) led me to experiment on my SnS kettle with direct grilling of ribs over coals on an elevated grate. The other thing is the fact that the brasero design doesn't allow you to sweep the coals from the brasero box to the cooking chamber. Having to shovel them all the way out and then back in seems like a pain. I'm sure they can come up with a design that integrates the brasero into the cook chamber

Expanded metal cooking grates is what this model used to come with, I know because I have one. Unfortunately I took delivery of my LSG SMG last December and to my disappointment this grill was updated to include these new style grates you are showcasing like a month later. If I had only known or been informed, by LSG while My SMG was still in production, i would have gladly waited a month or longer for this new grate, and gladly paid more as well.

The only issue I see with this grill is the expanded metal for the hot coals. This will not last long. I would use either small bar stock or angel iron like the V grate but smaller size. I have used expanded metal like what is shown here but it has not lasted more than 2 years before it wears away and there is a big hole.

Grew up not too far from Santa Maria. Hands down, the most “fun” style of outdoor cooker.

@@danielploy9143 lol. If you only knew how much money and time I've spent on youtube over the last 5.5 years, you'd realize how funny that sounds. It would have been a lot cheaper in the long run to just buy it. but thanks for watching.

First, - Thanks for some new content - we all miss you so much. Great review! - I am a hands-on guy, so this would really appeal to me. What a beast of a grill! It looks amazing, and it is so configurable, and well optioned.

Really awesome video as always, brother! I love those style cookers. I’ll always remember those Santa Maria Mushrooms that Harry Soo made when I was with you guys in Dallas. How’d you pull off that police scene lol? Always going the extra mile, my friend. Thanks for your time yesterday, we’ll talk soon. Cheers 🍻
