Ham & Cheese Stuffed Biscuits
You will need:
1 can flakey layers biscuits
8 ounces of leftover ham
4 eggs
1 cup of shredded sharp cheddar cheese
Scramble and cook your eggs, set aside to cool. Finely chop leftover ham, mix with eggs and cheese (save some cheese for topping) pull apart each biscuit into a makeshift pocket or clamshell. Stuff with 1/3 cup of ham and cheese filling, stretch biscuit around filling and press to seal, shape back into a biscuit round. Brush with an egg wash and top with a sprinkle of reserved cheese. Bake at 350 degrees for 18 to 20 minutes. To freeze, let cool completely then wrap each in parchment or wax paper, place in a freezer bag and store frozen for 3 to 4 months.
Monte Cristo Sandwich
2 slices of sandwich bread
Leftover ham slices
Dijon mustard & mayo
Sliced cheese of choice (I used swiss)
Eggs
Milk
Assemble sandwich by spreading mayo and mustard on each slice of bread. Top with sliced cheese and ham. Mix 1 egg with approximately 1/4 cup of milk per sandwich. Place assembled sandwich in egg mixture and flip to coat on both sides.
Fry on medium low heat in a buttered skillet for approximately 3 minutes per side.

2 cans of potatoes (drained)
1 cup of instant potato flakes (any flavor of choice)
2 1/2 cups of low sodium chicken broth
2 1/2 cups of milk
Dice onion and sauté with butter/oil until softened. Add in leftover ham, broth, and milk. Let come to simmer then stir in drained canned potatoes and instant mashed potato flakes. Continue to cook and stir just until heated through and thickened
Cheesy Ham and Broccoli Pasta Bake
1 onion
8 ounces of leftover ham
8 ounces of sharp cheddar
1 bag of broccoli florets
1 packet of country gravy mix
1 & 1/2 cups of low sodium chicken broth
1 cup of milk
12 ounces of egg noodles
Ritz crackers or fried onions for topping
Dice onion, shred cheese, thaw and chop broccoli (to quick thaw broccoli microwave for 3 minutes, or refrigerate overnight)
Sautee onion in butter/oil until softened. Add in leftover ham, chopped broccoli, broth, milk, and gravy powder. Let thicken slightly then add in half of your cheese. Mix until all of the cheese is fully melted then stir in the remainder of the cheese. Set this mixture aside.
Boil egg noodles for 5 minutes. Drain, mix with prepared cheese sauce, pour into a baking dish and top with crushed ritz, chips, or fried onions.
Bake at 350 degrees for 20 minutes and enjoy!

Thank you!! This is perfect. My brother always gets a ham for Thanksgiving and Christmas, but since I host, I am stuck with the leftovers. I don't like ham but I'll eat it when mixed with other things. Thanks for helping me keep the leftover ham from going to waste!!

That egg wash hint is brilliant! Looked like you touched the rack when you put the pasta dish in - hope your fingers didn't get burned. :) Also hope you have a lovely holiday off of the Tubez. I've been inspired by some of your videos for this year's holiday meal (it's scaled down as I'm not traveling this year). I'm planning to do the ham rosettes for my Xmas eve dinner and then Xmas day I'm going to roast a chicken (I think? I have both pesto and salsa to use up in the fridge, so I'm not 100% sure where I'm going with this). Hopefully it'll turn out okay because my kids are bringing a friend. Actually, now that I've written it out, maybe I should do those rosettes for Xmas day - they did look nice and fancy. Guess I'd better go google how much ham one person will eat...

I never thought about using gravy mix for soup but that's a great idea. I've used brown gravy mix with stews (so good) so I'm going to have to try that with the white gravy mix.

Hey Rebecca!!! Thank you so much for all your ideas! Thank you for thinking about ALL people, but just a few. I'm disabled and on a budget, but I'm able to go to more than 1 store or Dollar Tree. All your ideas help give me ideas of what to make. I shop sales for the most part. But usually I make the same things over and over again. I'm really picky when it comes to food. So seeing things to make that's not in my mind is great. You letting us know we can use something or not and it'll still work helps alot! I won't eat mayo, mustard, tartar sauce, sour cream, any salad dressings, or even ranch just to say a few. So you letting us know we can still make something without those things and it still being good, helps so much!! I hope you have a Merry Christmas, and a safe New Year!! (130) You should try making ham salad. Finely minced ham, mayo or Miracle Whip (whichever is your thing) pickle relish to taste (the mustard-based ones are a good cheat) and that's about it. Butter (or margarine) two slices of bread, slather on the ham then add pretty much whatever else you like (lettuce, tomato, cheese etc.).

Oh wow Rebecca you just gave me a great idea!! I have several pouches of mashed potatoes, and love potato soup; but never thought to put them together. Its also perfect for someone like me who only cooks for 1. I did try your country gravy mix broccoli soup, and that totally blew my mind. It was so simple & delicious!! I always make ham salad but I use dill pickle relish instead of sweet, it goes really well with the smokey ham flavor. We put it on some good Italian bread rolls with a slice of cheese, lettuce & thin sliced tomato with a side of kettle chips & a pickle spear. One of my favorite lunches! Super easy to make and a nice quick lunch for the days after Christmas where everyone is burnt out 😂 even my kids love it. I’ll definitely be trying some of these recipes too since we always have tons of leftover ham after the holidays. Merry Christmas to you and your family! ❤️🎁🎄

I am the only eater of ham salad in my house. I love it! I will be making a small batch this year, and freezing some ham for a small batch later. I also like dill relish! I hate sweet relish. Plus, we have a Honey Baked ham this year. It's sweet enough.

Reminds me of how people won't even taste grits if you call them grits but call them white southern style polenta and they not only try them but like them. Add some whipped cream cheese to your grits after cooking, that's so good!

Wow- that potato soup recipe is genius. I use the diced and canned potatoes in my black bean soup, but never thought about making just plain potato soup with them! Also, you can dice up leftover ham and use it to add to things like canned split pea soup - with needs a bit more in it. Or just add the diced pieces to a can of butter beans, hominy or - as I'm going to do for New Years - black eye peas (a traditional NY day dinner from my childhood).

Rebecca, my mom and I made the pasta bake tonight with some leftover Christmas ham. I cannot have gluten, so we used gluten free rotini instead of egg noodles and gluten free condensed cream of mushroom soup in place of the country gravy packet. Wow, this was really amazing! We both loved it and almost couldn't stop eating it! Thank you for your videos, especially this one, to help us creatively use the tons of ham leftovers!!

I made the soup it’s amazing! I added kale and a bit of bacon and we like it more liquidity so I just added more milk and chicken broth. Thank you so much (left over Christmas ham didn’t go to waste) ❤

My daughter made a ham at thanksgiving with a citrus glaze on it and I was getting up during the night heating it up and just eating bowls of ham😂 ham is just delicious!!!! There’s a local restaurant called The Pod, quite expensive, but they have a Monte Crisco sandwich that is just delicious!!!!!

Recipes look great. I don't know if dollar store carries them but frozen, cubed hashbrowns might work well in your soup, rather than canned. They're par cooked, and tiny, so would cook quickly. They work great in clam chowder.

This would be great for my husband and son for breakfast. My mom made pea soup with ham hocks. It's an acquired taste. I prefer ham and potato soup I discovered.

lol. My husband hates casseroles so much. I often tell him, no it’s a pasta bake, see the veggies are on the side! It doesn’t work but he’s gracious enough to eat it anyways. 😆

So glad your hair is pulled back!🤣 Personal thing when I see cooks (Rachel Ray & many others, so they look nice cooking w a bunch of jewelry on their wrist & hair down. A local restaurant we had, unfortunately, no longer open all though the restaurant that adapted their own Monte Cristo, which I love 💕, uses a batter dip, not a thin French toast, although many recipes online do it your way, try batter dipped! Then you dust w powdered sugar, and use a jam, like raspberry, maybe 🤔 a preserve to dip. I tried making these at home once-And, I do still eat these, but if you would see all the oil they actually absorb, probably not good to eat often. I used paper towels to try to soak up additional grease, and most was already absorbed into the sandwich. PLEASE 🙏 TRY the battered dipped, and see what you think. I can’t remember if It was like a funnel cake batter? I believe it was-I had looked up a million recipes until I found one that looked similar. Definitely, where it is at though! For the work, I will buy mine down the street from me for $10 considering what they cost to make & no hassle.

What you made in the beginning is WAY better than a hotpocket. Hotpockets probably have to be one of the worst things in the freezer section. They are terrible. It didn't' used to be this way, but the quality is so bad since they were sold to a different company that they are just crap.

I believe the Monte Cristo you made was actually a croque monsieur! I had to look it up because I was wondering the difference and it seems a Monte Cristo is a variation that has turkey. Huh!

I made a similar soup recently with frozen cubed potatoes, frozen diced onions, and frozen peas & carrots. I also love thickening soups with potato flakes - great tip.

My favorite thing to do with left over ham is ham salad for sandwiches. I just put the ham, mayo, sweet pickle relish and onions in a food processor and grind it up) Fun fact, Monte Cristos are usually served with whipped cream and strawberry jam. I grew up in the frozen north east and soup was wonderful during the winter. My mom would make potato soup adding in some bay leaves, and split pea. I love split pea soup with sweet corn bread . My daughter got a free ham from her work. So these recipes will be great for the leftovers. 🥰🎄❄☃🍴🎁💝✝Merry Christmas Rebecca!🥰🎄❄☃🍴🎁💝✝

I don't go to Dollar General but do frequently shop at Dollar Tree and since watching your channel have gotten some amazing recipes that I have yet to try to make but I'm glad that I caught on to your channel so I can. Thanks for always bringing your calm presence and creativity! I'll humbly suggest a video idea: soft and smooth foods for people who have trouble chewing! I recently had dental surgery. Even some soft things like pasta can be uncomfortable to eat. It has made me even more aware of how frustrating it must be for someone who has to eat like this all the time! I'm recovering, but maybe it'd be helpful for others in the future. Just an idea! I'm sure it would be very challenging. I hope your holidays are wonderful. ❄️

Good idea, I’d like a video on that too. My BIL has cancer & has lost his appetite. He’s primarily eating only soft foods or liquids. Need to keep him from losing more weight.
