New Year's Cinnamon Cookies - Christmas Gingerbread Proven Recipe, Practical!

When I had children, I wanted us to welcome the New Year with gingerbread, which will become a tradition in our house, with a smell and taste that will make them remember the holidays, so when they grow up, they will say with all their heart: "My mom makes them the best". Just as many will say the same about their mothers or grandmothers:) Although cookies are different, although everyone has their own style...
So I tried various variants, and then I found the one that I liked the most, doubled the measure, simplified it a lot because I realized that some steps can be skipped without any difference in the result. Practical and very tasty gingerbread that we make in our family when it's winter almost every other day - because they are perfect for us as gifts, they are in front of you, enjoy!
NEW YEAR'S CINNAMON COOKIES or CHRISTMAS GINGERBUCKS
- 2 eggs
-200g of butter
-200g of powdered sugar
-2 vanilla sugars
-2 baking powders
-2 bags of cinnamon
- 6 spoons of honey
-600-700g of flour
- powdered sugar for sprinkling
Beat (by hand or with a mixer) the eggs and powdered sugar, add the melted butter, then the remaining ingredients, and finally add the flour a little at a time. Knead by hand until compact and not too sticky.
(Note: if the butter is at room temperature, i.e. just softened, you will need less flour, and if it is melted, you will need more - the taste is the same in the end. Of course, even if it falls apart when you remove it with a rolling pin, gather all the dough into a ball again, add a little flour and mix).
Cut the dough in half into 2 parts, then thin it out with a rolling pin and with a rolling pin, make shapes that are placed on baking paper in a baking tray. For harder gingerbreads, they need to be baked for up to 10 minutes, for standard ones, about 7 minutes at 180 degrees. When they are taken out, sprinkle with powdered sugar. This amount of dough yields about 3 large trays. If it's too much, you just need to halve the amount of everything.
The whole house and surroundings will smell, that's for sure!
Because when it's tastiest, it's Mmm BRE!
